Leftover baked gold potatoes, diced and fried in EVOO + soybean oil
and seasoned with FGBP, basil, oregano, thyme and coriander seed last 3 minutes. Diced green peppers and red onion sautéed separately and mixed in at last minute so the potatoes wouldn't lose their crisp. https://i.postimg.cc/FHxbJyZ8/Potato...z-and-Eggs.jpg Topped with two fried eggs topped with Sontava Habanero sauce. I happen to have some boiled/smashed oiled and roasted small gold potatoes from a few nights ago so that part reheated in a skillet for this breakfast/dinner is easily covered. ![]() I'd scramble the eggs and add some grated cheese. The addition of any sort of hot sauce would depend entirely on my mood. Fried potatoes, eggs, bacon. In a skillet? Yum! Jill |
