Potatoes O'Sqwertz and Eggs
 
Leftover baked gold potatoes, diced and fried in EVOO + soybean oil
and seasoned with FGBP, basil, oregano, thyme and coriander seed
last 3 minutes.

Diced green peppers and red onion sautéed separately and mixed in at
last minute so the potatoes wouldn't lose their crisp.

I do basically the same except I finish with diced crispy bacon and
scrambled eggs, and topped with green onions
That shows up quite often for Sunday night supper.

I agree, Janet, about the crispy crumbled bacon and scrambled eggs. I
happen to have some boiled/smashed oiled and roasted small gold potatoes
from a few nights ago so that part reheated in a skillet for this
breakfast/dinner is easily covered. :)

I'd scramble the eggs and add some grated cheese. The addition of any
sort of hot sauce would depend entirely on my mood.

Fried potatoes, eggs, bacon. In a skillet? Yum!

I like the runny eggs to sauce my potatoes. I was going to add some
chopped ham, but I went veg on this one.
