Default buffalo wing sauce recipes?

I am trying to find a good buffalo wing sauce recipe
but mostly what I am finding on the web isn't so good
sounding...basically just butter and tabasco. Anyone have a nice
inventive recipe they'd care to share for this?

Do you want 'inventive' or authentic? 'Cause that's essentially what
Buffalo wing sauce is - hot sauce (specifically Frank's Red Hot, once
known as Durkee's Red Hot) and margarine/butter. Go 50/50.

Don't think about it - just eat it. You'll be glad you did. Don't
forget the blue cheese dressing for dipping!

Not even 10% butter. I spent a day working in the kitchen at a friend's
brother's bar (after installing a Verifone terminal for them), this
is/was a very popular bar and that day we probably had 20 orders for
wings to go in addition to the in house orders.

No butter was used at all, wings went from freezer to fryolator, then
were drained, tossed in a container with the Durkee / Frank's Red Hot, a
little ground cayenne pepper added for the extra hot version and then
directly to the plate along with the obligatory carrot and celery stick
garnish and tub of blue cheese for dipping.

The secret to the best wings in the area was simply Tyson chicken,
Durkee / Frank's Red hot and Ken's blue cheese, nothing more, just
quality ingredients.

I personally think those proportions suck, and in my experience are
not authentic either. You need far less butter, and some white
vinegar added.

I posted a more exact recipe a few years back.

was looking for a pepper sub for a dish and found these links for wings that
you might be interested in so I am putting it at the top so not to get lost

Some pepper facts:
Franks hot uses a Cayenne variant
McIhenny uses a Tabasco variant
both use vinegar as a base.
Both are variants are Capsicum frutesuns ( bush) species measuring between
20,000 and 50,000 Scoville Heat Units depending on who you talk to.

I *know* this will offend the Buffalo Wing purists -- I'll
just apologize ahead of time. I got this recipe from a packet
of Hidden Valley Ranch many years ago and we love it:

Ranch Hot Wings

12 chicken drummettes
1/2 ounce Original Ranch dressing mix (powder)
1/4 C. melted butter or margarine
1 1/2 tsp. white vinegar
3 T. Crystal Louisiana Hot Pepper sauce
1 egg, slightly beaten
Flour
Prepared Ranch dressing for dipping

Preheat oven to 350º F. Melt butter over low heat, add
dressing mix, vinegar, and hot sauce, mixing well. Dip
wings in egg, then dredge in flour. Brown in oil over
medium heat, then transfer to 13" X 9" baking pan.
Brush both sides of each wing with sauce, bake for
50-60 minutes.

Note: These are too hot for me, so I make a second batch
with half as much hot sauce.

Actually the ones I have found mainly sounded pretty weak. I figure all
the butter actually cuts the heat and I honestly don't consider tabasco
or frank's to be all that hot.

That's basically the heat level you get if you order "hot", as opposed to
"medium" or "wimp" in most places. A place here in Rochester offers two
hotter kinds, "catatonic" and "wise guy". I don't know how they crank it up
for those.

If Tabasco isn't hot enough, use a habanero based pepper sauce. There's
got to be some you like with other foods, just substitute your favorite
for the one in the traditional recipe.

Well, when I want heat but still have the food be somewhat palatable
I go with Black Mamba which I picked up at a gourmet shop but can be

Indeed, last night I made some popcorn and mixed some Black mamba in the
oil. great spicy popcorn!
For the wings maybe I'll try some Black Mamba, however, honestly I don't
think the pure heat of Black Mamba would go well with chicken. Some
other complimentary flavor is needed. Perhaps something citrussy? Maybe
some lemon juice would do the trick?

There is, or was, a place in Rochester near the foot of Monroe
that stays open all night and can make some really hot wings.

I find that adding sufficient powdered cayenne to the sauce
does the trick. (Assuming it's fresh, strong cayenne.)

Nick Tahou's, maybe? Interesting place to eat at 4:00 AM. Cops at one table,
hookers & pimps at the next, very tired musicians, drag queens. My friends
and I felt boring in that crowd.

Ahhhh...Jeremiah's! I know the "wise guys" have flecks of pepper on
them. Some look like crushed red pepper, some look like diced up
habaneros. The sauce certainly is more than just plain old Red Hot.
They're HOT but also have a very complex and interesting flavor! One or
two and I'm done!

We have to get wings from Jeremiah's every time my brother visits from
CT. We also have to do Dinosaur. I'll call my brother and ask him how
his cholesterol is feeling. When it's a little low, he comes to
Rochester!

Country Sweet's not bad, either, when I'm in a mood for that weird
phenomenon in which the evil all settles down into that slice of white bread
under the wings. There are people who won't eat the bread, but I won't
associate with them. :-)

If it's heat you're looking for : http://extremefood.com/index.php. They
should have something for you!

Personally, I use a 2:1 ratio, i.e.: 1 cup sauce to 1/2 cup butter. IMHO,
the butter helps the sauce coat the wings better. I use Frank's, for
authenticity and flavor. For more heat, Tabasco, ground cayenne, or ground
red pepper flakes. Or all three for the hotheads!

That is not what they give you in Buffalo. They do not use Tabasco. They use
Frank's hot sauce, more flavour and a LOT less heat than Tabasco.

There used to be a joint in Treasure Island, FL (near St. Pete, home of
the newlywed and the nearly dead) that had Buffalo wings to die for in
heat ranges to satisfy the most jaded of chiliheads. I think it was
called Foxy's. I'll chime in too, Buffalo wings are properly done by
deep frying unbreaded wings, tossing with a tabasco/butter sauce and
served with chunky bleu cheese dressing and celery sticks. Anything else
is just ...wings.

Garlic powder
Onion powder
A smidgin of Paprika for color

I'm not a fan of "hot wings".

Do you ever try Jar Do <sp?> wings?
Marinate the wings for a hour or so in soy sauce with grated ginger and garlic with
a touch of sugar then deep fry. Very good.

These sound so good, I googled -- seems it's spelled "Jar Doo".

Wikipedia's Canadian/Chinese info about the recipe calls them
"lightly breaded seasoned deep-fried chicken wings" but that
doesn't sound as good to me:
