I am trying to find a good buffalo wing sauce recipe
but mostly what I am finding on the web isn't so good sounding...basically just butter and tabasco. Anyone have a nice inventive recipe they'd care to share for this? |

'Cause that's essentially what Buffalo wing sauce is - hot sauce (specifically Frank's Red Hot, once known as Durkee's Red Hot) and margarine/butter. Go 50/50. Don't think about it - just eat it. You'll be glad you did. Don't forget the blue cheese dressing for dipping! |

I spent a day working in the kitchen at a friend's brother's bar (after installing a Verifone terminal for them), this is/was a very popular bar and that day we probably had 20 orders for wings to go in addition to the in house orders. No butter was used at all, wings went from freezer to fryolator, then were drained, tossed in a container with the Durkee / Frank's Red Hot, a little ground cayenne pepper added for the extra hot version and then directly to the plate along with the obligatory carrot and celery stick garnish and tub of blue cheese for dipping. The secret to the best wings in the area was simply Tyson chicken, Durkee / Frank's Red hot and Ken's blue cheese, nothing more, just quality ingredients. Pete C. |

I personally think those proportions suck, and in my experience are not authentic either. You need far less butter, and some white vinegar added. I posted a more exact recipe a few years back. Crystal Louisiana Hot Pepper sauce 1 egg, slightly beaten Flour Prepared Ranch dressing for dipping Preheat oven to 350º F. Melt butter over low heat, add dressing mix, vinegar, and hot sauce, mixing well. Dip wings in egg, then dredge in flour. Brown in oil over medium heat, then transfer to 13" X 9" baking pan. Brush both sides of each wing with sauce, bake for 50-60 minutes. Well, when I want heat but still have the food be somewhat palatable I go with Black Mamba which I picked up at a gourmet shop but can be found online too. http://www.hotsauceworld.com/hsw1553.html Indeed, last night I made some popcorn and mixed some Black mamba in the oil. great spicy popcorn! For the wings maybe I'll try some Black Mamba, however, honestly I don't think the pure heat of Black Mamba would go well with chicken. Some other complimentary flavor is needed. Perhaps something citrussy? Maybe some lemon juice would do the trick? |

I find that adding sufficient powdered cayenne to the sauce does the trick. (Assuming it's fresh, strong cayenne.) Steve |

I know the "wise guys" have flecks of pepper on them. Some look like crushed red pepper, some look like diced up habaneros. The sauce certainly is more than just plain old Red Hot. They're HOT but also have a very complex and interesting flavor! One or two and I'm done! We have to get wings from Jeremiah's every time my brother visits from CT. We also have to do Dinosaur. They should have something for you! Personally, I use a 2:1 ratio, i.e.: 1 cup sauce to 1/2 cup butter. IMHO, the butter helps the sauce coat the wings better. I use Frank's, for authenticity and flavor. For more heat, Tabasco, ground cayenne, or ground red pepper flakes. Or all three for the hotheads! |

They use Frank's hot sauce, more flavour and a LOT less heat than Tabasco. |

I think it was called Foxy's. I'll chime in too, Buffalo wings are properly done by deep frying unbreaded wings, tossing with a tabasco/butter sauce and served with chunky bleu cheese dressing and celery sticks. Anything else is just ...wings. JD |
