Default When to celery, when to not

We all know The Trinity is grn pprs instead of celery. Also, I never
include celery in my minestrone. OTOH, there's a jillion recipes
using the classic mirepoix of carrots, celery, and onions. I usually
have fresh celery around at all times. Even a simple celery stick w/ peanut
butter is a nice treat.

So, what other basic recipes should never include celery? Cajun n'
Creole food doesn't count.

I love celery... it's not a proper tuna salad without celery, chicken
stock must be made with celery, same as vegetable soup.... can't do
chinky cookery without celery. Celery is one of my favorite crudites,
great with all dips, and stuffed with cheese, and peanut butter. Often
a perfect snack is celery sticks and kosher salt for dipping.

I was just remembering the yummy refried beans that I used to get at a
restaurant here but now I can't remember which one. We had two that we ate
at frequently that are now gone. One put some chunks of celery in the
beans. Not a lot. But I always loved it when I got a piece. It was like
the prize!

There might not be celery in these things but there might as well be!

I just happened upon those gag worthy things the other night. Reminds me of
when I was on that raw vegan diet. Some of those people were really hard
core and wouldn't waste so much as a bite of food. Leftover smoothie or
anything else? No problem. Dehydrate it!

I did make fruit leather and it was fine but I have no real need/reason to
make it now. I could see doing it if you have excess fruit which we haven't
for a few years. We did have a bumper crop of apples and pears when we
first moved in but the trees are so old now we are lucky to have enough for
one pie or crisp and a few for eating fresh.

But I could see putting some celery and other veg into fruit leather. I
could not however see using the end result as a wrap like they did on the
HSN website.

Even better is kosher salt with bulb anise... but bulb anise is so
darned pricey, and it's not easy to grow, I've tried and it grew but
too slowly so was very bitter. When I see fresh bulb anise with their
fronds I'll treat myself... the fronds are good for seasoning fish
stock. Save the stalks and let them dry, then use them as a rack to
grill fish, they impart a lovely flavor.

About the only cream-of soup I enjoy is cream of celery.

I did just run across an oatmeal and celery soup recipe. It was pretty much
those two things and milk. Ick!
