Default When to celery, when to not

We all know The Trinity is grn pprs instead of celery. Also, I never
include celery in my minestrone. OTOH, there's a jillion recipes
using the classic mirepoix of carrots, celery, and onions. I usually
have fresh celery around at all times. Even a simple celery stick w/ peanut
butter is a nice treat.

So, what other basic recipes should never include celery? Cajun n'
Creole food doesn't count.
