I was already to make mashed potatoes when I started peeling 5 lb
of Klondike Rose. Every one had green under the skin. I started peeling deeper and deeper before I said the heck with it,and my wife announced we were serving bread. I looked on the web to see if peeling off the green was sufficient, but the consensus seemed to be why take a chance. Has anyone eaten green potatoes and lived to tell the tale? Are Klondike Rose especially susceptible? I did dig under a pile of bags to find these, fearing light exposure. |
