Default Bran Muffin Recipe

Trust me, I've Googled for a decent bran muffin recipe, but I'm looking for
tried and true. Many that I've Googled sound good, but gosh, they have a
lot of oil in them!

Why am I looking? I need more fiber in my diet, I can't eat cereal with
milk because I'm lactose intolerant, so I thought I'd try some bran
muffins - no raisins, though!

Sugar isn't an issue, but oil is, so I guess I'm looking for a lower fat
bran muffin. I don't care if they end up dry; I always have a big glass of
water next to me. Hey, somebody mentioned zucchini bread in another thread.
Is there a zucchini bran muffin? That would be tasty!

Kili, I substitute the same amount of unsweetened applesauce for the oil in
my bran muffin recipe which calls for oil. Works like a charm.

Alas, the bran muffin recipe I love (which I can't eat at the moment) calls
for buttermilk. Most have either milk or buttermilk. Ever try just
snacking on high fiber cereal sans milk?

I would try to modify an existing bran muffin recipe by reducing
the oil by 1/2 or 3/4 and adding an equivalent amount of applesauce to
the mixture for moisture. A quarter cup of oil divided into 8 or 12
muffins or more doesn't add much fat per muffin.

Bran means ANY kind of bran/fiber; grated zukes/carrots work fine, so
does wheat bran and oat bran, and all sorts of seeds, millet/sesame...
all or any. The real trick to making bran muffins, or any muffins for
that matter is to never use those stupid liners... muffins are a quick
bread, not a cupcake, NO stupid liners. I like to use those large
muffin tins (I like DD cup muffins), grease well with Crisco (yes,
CRISCO), fill generously so a big round muffin top forms, like a big
helmut (I know yoose gals like to nibble the rim), and bake well until
a nice dark brown *crust* forms (the Crisco does that). Remove from
pans immediately (tap sides to loosen) and allow to cool with plenty
of space between so they crisp instead of sog. All Bran cereal works
well for bran, in fact there's a good basic recipe on the box or at
their web site...make the basic and doctor with whatever suits... I
sometimes add chopped dates and walnuts instead of raisins.. add wheat
germ too, add honey for part of the sugar. For years I used
Washington brand bran muffin mix and doctored it, much better than
Jiffy. Washington brand corn muffin mix is good too... add medium
grit corn meal. I don't know what they cost now, used to be five for
a dollar... I'd use all five for a recipe.

Keep plenty of reading material in the terlit! hehe

You're welcome. Uh, can you not eat dried fruit or do just not care for
it? I often put dried cherries or dried cranberries in mine instead of
raisins.

I just don't care for raisins! I can eat dried fruit. Cranberries or
cherries would work.

Substitute half the oil in any given recipe for unsweetened applesauce.

How about prune puree? Baby food jarred prunes will work well.

Agree. Those work well, too. I usually use applesauce because I have it
on hand, but would have to remember to buy the baby food prunes.

There are times where I know I need to ingest more fiber, so I keep a
bottle of fiber supplement capsules onhand.
I take Metamucil with Calcium . I could never choke down enough muffins to
get the same results, lol!

I often eat All-Bran Cereal for breakfast. It has a lot of fiber. I know

I suppose I got my bran mostly through things you can't eat. Never had
a problem with high fiber until recently. Now I have to avoid it. I still
snack on dry Cheerios, no problem. Go figure

I'm going in a different direction here but this will get some oats in
you. I make two batches and vacuum seal a bunch to send to the kids.
One has to hide the package from her room mates.

Lou

Clumpy Granola

3 cups rolled oats
1 cup slivered almonds (and whole if you like)
1 cup pecans
1/3 cup shredded sweetened coconut
1/3 cup sunflower seeds
1/2 to 3/4 teaspoon salt
6 tablespoons light brown sugar
1/4 cup maple syrup
2 tablespoons honey
1 teaspoon vanilla
1/4 cup vegetable oil

Preheat the oven to 250 degrees F. Line two large rimmed cookie sheets
(or roasting pans if that’s all you’ve got) with parchment paper. If
you are making half, you can use one cookie sheet. Don’t try putting
it all on one cookie sheet or it won’t cook properly.

In a large bowl, stir together the rolled oats, almonds, pecans,
coconut and sunflower seeds. Toss in salt and stir to evenly disperse
salt.

In a microwave-safe measuring cup, stir together the brown sugar,
maple syrup, honey and vegetable oil. Heat on high for 1 minute, then
stir to dissolve sugar slightly. Stir in vanilla. Pour hot syrup
mixture over granola and stir until evenly coated. Dump oat mixture
out onto the two cookie sheets, spreading as evenly as possible and
pressing down slightly so that oats are in a thin, closely packed
layer

Cover loosely with large pieces of foil. Bake for 1 hour, 1 pan on
lower rack and one on upper. When you smell the granola (after about
40 minutes), check it to make sure it’s not browning too much. If it’s
covered, it should be fine. Also, the granola on the lower rack will
cook quickly, so after 40 minutes, swap racks. After 1 hour, remove
the foil. Cook for another 15 minutes or until it is golden brown.
Remove from oven and let cool completely. Granola will crisp as it
cools, so don't worry if all of the granola doesn't seem crisp after 1
hour and 15 minutes. When cool, break the bigger clumps up into
smaller clumps.

This makes a little over 2 1/2 pounds


Note: You may want to try this first with half a batch baked on middle
rack of oven. When baking two pans, you run the risk of burning the
pan on the bottom rack, so if you are doing two pans, watch bottom pan
closely and swap spaces.

And I don't know the reason but you can make zucchini bread/muffins with
almost no oil with no change in the result. I usually use about 10% and
use melted butter (which adds a lot to the taste) and the rest with
applesauce. I find the amount of sugar typically called for gives a too
sweet result so I cut it back to 75% of the original amount and the
result is fine.

It's not a cheap treat but pretty healthy. I've used cashews,
pistachio's and soy nuts in it to. Damn good stuff.

Alan's Green Chile Corn bread

alan, quick breads/biscuts, tested

-----wet stuff-----
1/2 cup sour cream
1 (4 oz.)can green chiles
2 chipotle chiles in adobo sauce; minced
4 strips bacon; cooked & crumbled
1 cup shredded cheddar cheese
1 (14 oz) can creamed corn
3 eggs
3 tbsp. vegetable oil
----dry stuff----
1-1/2 cup cornmeal
3/4 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 tbsp Sugar; more or less

preheat oven to 400F

Combine wet stuff in a bowl...mix well.
Combine dry stuff in another bowl... mix well.

the bacon, chipotle, and cheese are optional ...add all, some or none.

Add the 2 mixtures together and stir well and immediately pour it into a
Pam Sprayed 9'X9' pyrex pan.

The Idea is to to get it into the preheated oven soonest.

Bake at 400 F. for 40 min or so. Cool in pan for 10 min., then transfer to
wire rack to cool completely.

I eat peaches, blueberries, melon and grapes, for the most part. What I'm
trying to do is battle out the difference between my colitis/IBS and my gall
bladder. With colitis, like diverticulitis, you're supposed to be on a
low-fiber diet. Well, I've been doing that for almost 30 years and now I
have gallstones due to lack of fiber. So, I'm looking for a healthy balance
that will try to ease everything without upsetting my iron issue and my
lactose intolerance. I'm a mess I tell you! LOL.

Default Bran Muffin Recipe

I will often take my zucchini bread and play with it - maybe use whole
wheat flour for half the white flour, maybe use shredded carrots and
apples for part of the shredded zucchini and such. A tablespoon of
ground flax seed to any quick bread recipe really boosts the fiber too.
No reason you couldn't do the same and play with a favorite recipe of
yours.

Also, here's our favorite bran muffin recipe.

2 large eggs
1/4 C brown sugar
1 C soy, rice or cow milk
1/4 C vegetable oil
1 1/2 C bran cereal *
1/2 C oat bran
1/2 C all purpose flour
2 t baking powder

Heat oven to 375 degrees. Grease muffin cups or use paper liners.

Beat eggs and sugar in a medium bowl. Whisk in milk and oil. Stir in
wheat bran cereal. Let soak for at least 15 minutes.

Thoroughly mix dry ingredients together. Fold dry mixture into wet
ingredients. Scoop batter into muffin cups and bake 20 - 25 minutes.
Cool before eating.

* any sort of twig like cereal or bran flake will work. Our most recent
favorite to use is Natures Path multi-bran flakes.

You could certainly add nuts or any sort of dried fruit to these if you
don't like plain bran muffins.

When I went to a gastroenterologist for a colonoscopy, he told me that I
had a moderate case of diverticulosis. He recommended a high fiber diet,
but to avoid or limit the amount foods that contain tiny seeds.

When I asked my doctor what to do about diverticulosis he said
"fiber."

The latest Penzeys.com catalogue has a Carrot Cupcake , that should
help with your fiber intake.
I made the cupcakes, they were tasty, even with out the frosting.
