Bran means ANY kind of bran/fiber; grated zukes/carrots work fine, so
does wheat bran and oat bran, and all sorts of seeds, millet/sesame...
all or any. The real trick to making bran muffins, or any muffins for
that matter is to never use those stupid liners... muffins are a quick
bread, not a cupcake, NO stupid liners. I like to use those large
muffin tins (I like DD cup muffins), grease well with Crisco (yes,
CRISCO), fill generously so a big round muffin top forms, like a big
helmut (I know yoose gals like to nibble the rim), and bake well until
a nice dark brown *crust* forms (the Crisco does that). Remove from
pans immediately (tap sides to loosen) and allow to cool with plenty
of space between so they crisp instead of sog. All Bran cereal works
well for bran, in fact there's a good basic recipe on the box or at
their web site...make the basic and doctor with whatever suits... I
sometimes add chopped dates and walnuts instead of raisins.. add wheat
germ too, add honey for part of the sugar. For years I used
Washington brand bran muffin mix and doctored it, much better than
Jiffy. Washington brand corn muffin mix is good too... add medium
grit corn meal. I don't know what they cost now, used to be five for
a dollar... I'd use all five for a recipe.
