i love zucchini pancakes. they are even better if you grate a bit of potato in there. it's best to not peel the zucchini.

Default From the Pumpkin thread to Zucchini

I thought I'd mention another couple of ways I use zucchini. When
making a red sauce (tomato sauce) for pasta, I like to grate a mediuum
zucchini and add it to the sauce. I can't describe it but it adds a
little something. And it melts right in; sort of disappears into the
sauce so you're not biting on zucchini.

I've also recently discovered grating it to make zucchini pancakes.
Kind of like shredded potato pancakes but with zucchini rather than
potatoes. Yep, there is grated Parmesan cheese involved. Pan fried in
a little bit of oil. Delicious!

In case you're not already doing it, it helps to squeeze the grated
zucchini in cheesecloth to extract the excess moisture from what is a
very watery vegetable.

I often eat zucchini with red sauce on it (no pasta), and a little
cheese melted on top. Same with cauliflower.

Zucchini cake recipes are quite common in the US. I make it
frequently. In fact, I purposely freeze shredded zucchini from the
summer harvest so that I will be able to make the cake whenever I
wish. I see no real difference between your recipe and mine. I
wonder what makes your cake so dense?

Yep; I know to do that. Thanks for pointing it out for those who might
not be familiar with how much water zucchini contains.

that's why it is so good in zucchini cake and bread, it makes a moist
final product.
I see a zucchini cake in my near future. rfc has done it again and
created a craving.
