I thought I'd mention another couple of ways I use zucchini. When
making a red sauce (tomato sauce) for pasta, I like to grate a mediuum zucchini and add it to the sauce. I can't describe it but it adds a little something. And it melts right in; sort of disappears into the sauce so you're not biting on zucchini. I've also recently discovered grating it to make zucchini pancakes. Kind of like shredded potato pancakes but with zucchini rather than potatoes. Yep, there is grated Parmesan cheese involved. Pan fried in a little bit of oil. Delicious! ![]() Jill |

Delicious! ![]() In case you're not already doing it, it helps to squeeze the grated zucchini in cheesecloth to extract the excess moisture from what is a very watery vegetable. -- Bob St Francis would have done better to preach to the cats |

I often eat zucchini with red sauce on it (no pasta), and a little cheese melted on top. Same with cauliflower. Cindy Hamilton |

I see a zucchini cake in my near future. rfc has done it again and created a craving. Janet US |
