Default From the Pumpkin thread to Zucchini

I thought I'd mention another couple of ways I use zucchini. When
making a red sauce (tomato sauce) for pasta, I like to grate a mediuum
zucchini and add it to the sauce. I can't describe it but it adds a
little something. And it melts right in; sort of disappears into the
sauce so you're not biting on zucchini.

I've also recently discovered grating it to make zucchini pancakes.
Kind of like shredded potato pancakes but with zucchini rather than
potatoes. Yep, there is grated Parmesan cheese involved. Pan fried in
a little bit of oil. Delicious!
