Default Chopped pecans

We eat a lot of pecan halves in salads. I sometimes make a chicken salad
that uses them as well. But... I messed up and bought a HUGE bag of chopped
pecans and don't know what to do with them. I have already made Applets. As
in Applets and Cotlets. Those normally use walnuts but I used pecans. The
end result tasted good but I think there was not enough pectin in the apples
because they didn't set up as firmly as they should have. I normally use
apples from my tree and those are perfect.

I have also made vegan fudge using Christina Pirello's recipe but that calls
for brown rice syrup and I don't feel like trying to track that down.


And I made pralines which I know would be better with the halves. Damn but
they were good but that was also a way to use up some cream. I'm not
planning to buy more cream and as a diabetic, those are not what should be
eating.

Do you know of any savory type recipes that I could use these in? Do you
think they would work in a chicken salad or would they sort of get lost in
there? I also find myself with some extra canned pineapple. Apparently I
bought some at some point and it got put in a weird place. I found that
today. I have not made chicken salad with pineapple. I normally use apples.

Mainly the people I am cooking for are trying to avoid eating wheat. They do
eat some but I would prefer not to do something like a cake or cookies as I
won't eat that stuff and not sure that they would. I do sometimes make
gluten free things for them. I guess I could do some more zucchini muffins
if I ever find good zucchini again. For weeks now, the only zucchini I've
seen in the stores has been tiny and not very big around. That would use up
some nuts but I have a lot of them. Thanks!

Pecan crusted chicken breasts or pecan crusted fish. You'd have to
grind them up a bit more in your food processor.

Chicken breasts are really good done this way. Pecans are a bit
pricey, so I don't do it often.

Part of the problem now is that I bought food for people who no longer live
here. And they refused to take that food with them. We don't like the stuff
or in my case, can't eat it due to eggs. I will likely be giving some to a
friend later this week.

Overflowing with inedible shit that no one wanted to eat for at least
ten years.
This morning I bought a 4 lb top round roast and a whole boneless pork
loin (8 lbs)... put the top round into a zip-lock, and trisected the
pork loin, tied and placed into zip-locks... no problem fitting them
into my freezer... I don't save inedible shit, in fact inedible shit
never makes it to my freezer, inedible shit goes out for the critters
or into the trash. In fact I don't buy inedible shit. All I have in
my kitchen is a mid-size top freezer fridge, I think 20 cuft, it's
never too full and there's two of us here... Julie is just one, it's
not possible her freezer is full except with a glut of inedible shit.
My basement fridge with top freezer is only 14 cuft, primarily used to
store my vegetable garden crops, and to store frozen stews/soups...
it's never close to crammed full... right now hat freezer can easily
take a gallon zip-loc of shelled pecans with plenty room remaining.
Towards spring I try to use up and make room for the next summer crop.
I'm 110% positive that Julie's freezer is jammed full of inedible
shit.

black walnuts are so different than regular
walnuts. i much prefer them in certain cookies.
i've never used them for anything else like a
pie or a cake.

considering how much work it takes to get them
out of the shell i can see why it would be expensive.
plus when i was doing it the nuts weren't the best
quality so i had to taste a little of each one
before i bothered to finish shelling the whole
thing out.

hours of work and smashed my fingers a few times
with the hammer. i'll gladly pay someone else to
do it instead. Mom said that as a kid she had to
do it and they used a vice. we don't have anything
that fancy here.

raisins would be ok too. can toast the pecans
a bit first to bring out more flavor.

i don't usually like raisins in the regular
version of waldorf salad, the apples are often
sweet enough. i also change the sauce around
quite a bit using different sweet and sour
combinations and different spices.

all recipes are just a starting point...
enjoy!

some cookies are good, take a fairly soft
bland shortbread cookie, dunk in something
to make things stick to it and roll it in
crushed pecans, top it with a marachino cherry.

and of course pecan sandies.

According to a few of the 797,000 results from Google, you can dip
them in beaten egg, honey mustard, or maple syrup and then pat the
crushed pecans on. And you can fry them in oil or bake them on a sheet
pan.

You really should install Google on your computer. You'd save a lot of
time.

I had a friend who claimed that piling the nuts in the driveway and
running a pickup over them, worked well.

No. We hate raisins which is why I dislike Waldorf salad.

Maybe but ti me, Waldorf is a very specific thing.
