Default Chopped pecans

We eat a lot of pecan halves in salads. I sometimes make a chicken salad
that uses them as well. But... I messed up and bought a HUGE bag of chopped
pecans and don't know what to do with them. I have already made Applets. As
in Applets and Cotlets. Those normally use walnuts but I used pecans. The
end result tasted good but I think there was not enough pectin in the apples
because they didn't set up as firmly as they should have. I normally use
apples from my tree and those are perfect.

I have also made vegan fudge using Christina Pirello's recipe but that calls
for brown rice syrup and I don't feel like trying to track that down.


And I made pralines which I know would be better with the halves. Damn but
they were good but that was also a way to use up some cream. I'm not
planning to buy more cream and as a diabetic, those are not what should be
eating.

Do you know of any savory type recipes that I could use these in? Do you
think they would work in a chicken salad or would they sort of get lost in
there? I also find myself with some extra canned pineapple. Apparently I
bought some at some point and it got put in a weird place. I found that
today. I have not made chicken salad with pineapple. I normally use apples.
I do have a lot of apples too. Hmmm...

Mainly the people I am cooking for are trying to avoid eating wheat. They do
eat some but I would prefer not to do something like a cake or cookies as I
won't eat that stuff and not sure that they would. I do sometimes make
gluten free things for them. I guess I could do some more zucchini muffins
if I ever find good zucchini again. For weeks now, the only zucchini I've
seen in the stores has been tiny and not very big around. That would use up
some nuts but I have a lot of them. Thanks!

Why, the freezer is the best place to store nuts to keep them from
going rancid.

Remember that commercial on TV, it have been aired only on PBS, but it
stated "Reading is FUNdamental." I guess Ju-Ju was asleep every time

Part of the problem now is that I bought food for people who no longer live
here. And they refused to take that food with them. We don't like the stuff
or in my case, can't eat it due to eggs. I will likely be giving some to a
friend later this week.

Banquet and EnCor frozen entrees. IOW, pre-prepared crap that takes up
a lot of space and no one eats.

We do eat the frozen meats. I keep those in case I can't get to the store. I
have been finding good deals on fresh meat of late so no need to serve
those, of which I believe there are two packages.

raisins would be ok too. can toast the pecans
a bit first to bring out more flavor.

i don't usually like raisins in the regular
version of waldorf salad, the apples are often
sweet enough. i also change the sauce around
quite a bit using different sweet and sour
combinations and different spices.

all recipes are just a starting point...
enjoy!

some cookies are good, take a fairly soft
bland shortbread cookie, dunk in something
to make things stick to it and roll it in
crushed pecans, top it with a marachino cherry.

and of course pecan sandies.

No. We hate raisins which is why I dislike Waldorf salad.

Pecan crusted chicken breasts or pecan crusted fish. You'd have to

Chicken breasts are really good done this way. Pecans are a bit

According to a few of the 797,000 results from Google, you can dip
them in beaten egg, honey mustard, or maple syrup and then pat the
crushed pecans on. And you can fry them in oil or bake them on a sheet
pan.

You really should install Google on your computer. You'd save a lot of
time.

How could you forget something that's not true? I cook raw chicken and other
meats all the time. Do I touch it with my hands? No. Fork, tongs, plastic
gloves...

"Can't handle" raw chicken means you can't/won't touch it. So it is
true.
