Default Beans again

Last time I cooked my beans in a slow cooker with a lump of smoked gammon
and they were well received! I have some beans in soak now and tomorrow
intend to cooked them with some chicken joints and good chicken stock. (I
will add onions etc too)

Any comments would be welcome?

I recommend mashing a cup or two of cooked beans then returning them to
the pot, or simply attack the pot with a potato masher. The mashed beans
make a rich, creamy broth.

What else will you have with your beans?

What kind of dried beans and what seasoning?

These are called 'Dermason' white beans. I got them in the USA section at
the supermarkt but sf says they are Turkish

Seasoning? Not too much for us. I have some concentrated chicken stock
(about a pint) and will add some herbs and possibly tomato?

You're adding garlic, herbs, maybe some tomato? You could turn it
into a one pot meal if you add something green at the end... spinach,
chard, kale. How long it cooks depends on which green you choose.

Garlic, onions, herbs. I hadn't though of tomato. The last lot were even
better when I made a pot of tomato sauce and mixed it in at table. Do you
think I should add a can of tomatoes at the start?

You could turn it

I add mine at the beginning because I want the tomato to be in the
background, not front & center. If I wanted tomatoes to stand out,
I'd still add most at the beginning and save some to add near the end.

I think you are only supposed to add acid at the end. Otherwise the beans
could toughen.

I don't know the volume you're making, but I'd add anywhere from a
whole plum tomato whizzed in the mini-chopper to a can of diced or
crushed... it all depends on how much you want the tomato to assert
itself.

Not so good as the black eyed peas.

Did you add enough salt? Beans need salt. I also like them
disintegrating - so I'd probably love however it is they turned out
How did you serve them? I'd take the chicken off the bones, mix it
into the beans and add the greens I spoke about before. Serve over
rice - or you could thin it a bit and serve as soup.

Here's a recipe I think is similar to what you made, maybe something
in the directions will ring a bell for you.

In all honesty, I don't cook black eyed peas because hubby claims not
to like them. I should try it again though - his overall eating
pattern has changed for the healthier over time, so he might have a
different attitude when presented with them again.

According to this chart, black eyed peas might be more tender than
white beans - but your variety isn't mentioned specifically.

What is gammon?

I asked the owner of a favorite Mexican place about his beans. His are
never split. Mine sometimes are. Apparently I wasn't using nearly enough
water. I thought the idea was to have very little water left over. Nope.
He said to use tons and save it. Can be used for soup or bread.

LOL thank you. DH enjoyed the last lot. Not for me because I don't like
smoked meat so this time it is for me too

I don't buy ham much/very often/not quite never... so when I want some
hammy smoked pork flavor for beans (usually bean soup), I buy smoked
pork chops. One of them is perfect AFAIC for the amount I'd make in a
crock pot. Do you have an option like that in UK?
