I've got a spiral cut ham, gonna make corn pudding to go with, and
something ["oriental"] green beans ... and a pineapple upside down
cake.
My cats love corn... this one is not spicy and contains no onions:

Another turkey. With a different stuffing. We're not sure where this
recipe came from but it became one of our favorites years ago:

Seafood-Fennel Stuffing

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
10 cups French bread -- 1/2" cubes
1 pound shrimp, shelled and cut into pieces
1 large can crabmeat (1 lb.)
1 large onion -- chopped
1 each red and green bell pepper (3/4 cup) -- chopped
3 Tablespoons butter
3 each eggs -- beaten
1 can cream of shrimp soup, condensed (10 3/4
oz.)
1/4 to 1/2 cup milk
1/2 cup fresh fennel -- chopped
(or 1/2 tsp. crushed fennel seed)
1/2 teaspoon black pepper

(If desired) Spread bread cubes in a shallow baking pan. Bake at 300
degrees F for 10-15 minutes or until dry, stirring once.

In medium skillet cook onion, bell peppers and fennel (if using fresh)
in butter until
crisp-tender. Cool.

In large mixing bowl, stir together crab meat, shrimp, onion/pepper
mixture, eggs, soup, 1/4 cup of milk, fennel (if using seed), and
black pepper. Stir in bread cubes until coated. For moister
stuffing, stir in more milk.

Bake in casserole(s) 45 minutes at 325 degrees F.

Fig and walnut tapenade
Some cheese spreads that are undecided.

10 pounds crab legs
Calamari (frozen from Costco)
Hush puppies
Cheddar biscuits

Not sure if a salad or veggie would be best.

If I go with a salad I'll raid the salad bar at the local hospital.
It's wonderful and I can't make a salad as cheap.

It's just us and Louise's two daughters so it's going to be a simple
meal. One was over last night and we had prime rib which was great so
the feasting has already started.

Monday is dinner with my son and my mom and we're going out so I don't
have to cook.

I am making cranberry sauce and my wife is making chocolate eclairs. We
are going to my brother's for Christmas dinner and my sister in law will
be doing almost everything, and her mother always makes Christmas
pudding and caramel sauce.

The good news this year is Christmas eve dinner will be tamales. The
influence here is my MIL, who is Basque, but grew up on a sheep ranch in
Arizona.

Bought a Morel EZ Cut ham for a meal on or about Christmas.

Christmas day, going to a friend's house for prime rib. She may have
it in the oven when we get there, but I'm in charge of finishing it to
medium rare and doing the carving. Probably eight of us for dinner
and a day of relaxation together.

I may have posted this already (my dad and stepmom don't eat flour,
sugar, wheat, nuts, or dairy, and they'll be here for one day, so I'm
making the whole dinner friendly to their diet):

Standing rib roast (no gravy, just the jus on the side -- if there's
enough of it, I'll cook it down into a gravy-like substance)
Crash hot potatoes (

A pumpkin (or individual winter squashes) stuffed with brown and wild

dressing)
Layered red/white/green fruit salad in a glass trifle dish
Sugar-free pumpkin custards (my dad and step-mom drip liquid sweet-n-lo
on theirs; I use the recipe from Libby's (though I don't buy that brand,
'cause they're Nestle) and just leave out the crust and the sugar)
Coffee and tea

Roast tenderloin, rosemary potatoes, salad of some sort, appetizers
for sure and of course...lots of wine!

Organizing our family is more difficult than navigating the Atlanta airport.
Our time slot is 10:30 am - after some of them must have breakfast with
another grandmother and before lunch with yet another. I'm only serving
party food: pralines, caramel corn, nuts and bolts, cannon balls and Judy's
candied walnuts. Polly

Oy! I feel for them.

My kids have it easy, one's MIL isn't in the area so they're going
there for the week between Xmas and NYE... the other's MIL is in this
area and easy driving distance. Fortunately that family has a habit
of *early* celebrations/parties and I do late by habit so they go over
there first and come here after. All is good in my world.

Organizing gets much harder as time goes on. We had one event Tuesday
and three coming over the weekend. After the first of the year
there's three more.
