Default Dinner 4/24/2021

Thunderstorms blew in this afternoon so it's been pouring down rain.
I'll be cooking *indoors* tonight as opposed to last nights' fish and
asparagus on the grill dinner and subsequent grilled corn.

I've decided it's a good day for a hamburger. 1/3 lb. ground chuck
patty cooked in a cast iron skillet. Seasoned with salt and coarsely
ground black pepper and some garlic powder. Worcestershire sauce added
while cooking. The burger will be served topped with either a slice of
smoked gruyere cheese or asiago, haven't decided yet, On a toasted,
buttered whole wheat bun.

I've got a bag of Publix skinny "restaurant style" frozen fries; I'll
pop a handful of those on a baking sheet sprayed with some cooking oil
at 425F in the oven to go with the burger. They cook up nice and crisp
outside but tender inside.

Yep, it's a burger and fries night.

on the opposite side of the country it is also raining. I have no
idea what is for supper. We stopped at Costco to pick up a big box of
granola bars for my husband (because he told me he had plenty when I
last got groceries and we had noneJ) So we needed a special trip.
While I was in Costco I picked up a tray of their "BBQ Ribs" We had
them for lunch. BBQ'd they are not. I am so disappointed. After
that lunch I don't expect we will want anything hearty this p.m.

I'm sorry you were disappointed with the ribs. What was the matter with
them?

It's still raining, occasional lightning. I love a nice cool
thunderstormy-night.

What do you think of for BBQ'd ribs? Smoley, seasoned, sauce?
Very little seasoning so as not to offend anyone. No sauce. And
probably done on the rotissiere, so no smoke. Really no different
than doing in an oven. A Positive was that they were tender.
We had lightning and thunder and ice pellets and pounding down rain.
(I had just put out all my seedlings to harden off. Hope they live
thru 4 days of this)

Oh, that would definitely have been disappointing! At least they
weren't tough on top of everything else.

Maybe it was in the seafood case for two weeks before it was bought.

I've had oven cooked ribs that were pretty good with some seasoning and
a light sauce. Points for tender.

I normally would do them on the smoker for about 4 hours.

That would be about the only explanation I could come up with. But then
wouldn't it also smell a bit off before cooking it?

That's because it's a fish.

Possibly if they thought it was 'fishy'? It's a very mild fish.

My favorite method for it is is with about 3 Tablespoons cut up butter
and a little black garlic and sea salt mix. Made that way it's very
forgiving of longer cooking times if I forget to set the timer and
bring it to the computer room. 350F for 30 minutes (lower temp because
of all the butter). Can use a little saltfree lemon and black pepper
sprinkle as well. In fact, so mild just about any spice combo will do
but try to use a light hand with it or will overpower the Cod.

I like to slather on some mayo - wasabi mayo or Sriracha mayo are good. Sprinkle on some furikake, and air fry it for around 7 minutes. It's tasty alright.

We had lemon pepper cod 2 days ago. I slightly overcooked it and was
disappointed in myself. Cod is so mild and easy. My purchase turned
out to be a whole side of cod instead of pieces. Frozen for another
meal.

About ten years ago, I bought some Pacific cod at my supermarket for fish and
chips. I opened it the same day. Nope! I took it back. The butcher cleared
his cod display, and suggested tilapia. That´s when I found out that I
don´t like tilapia.

I've never tried cod but others here say it's mild.
This is definitely a case of "seafood going bad" ...has a "fishy" smell
or taste.

You're like Gary. You eat a product that's gone off, think that's how
it always tastes and then avoid it for the rest of your life.

I don't care for the texture much. It's like eating meat. I prefer a
softer fish. I don't care much for salmon for the same reason.

Farm-raised salmon is very soft (provided it's not overcooked, but that can
be said for nearly any fish).

What kind of fish do you prefer?

Hmmm, I don't find cod to be like that. Swordfish, halibut steaks,
salmon, yes have more firm flesh.

I'd like to rehabilitate him, but it may not be possible.

Master has some very deep psychological hangups. I worry that if I
broke through one layer, he might crack. Become as unhinged as mr.
kuth.

These days, it may be best to allow psychos to sleep as long as
possible.
