Leftover lamb curry and brown rice.
I have discovered that brown rice is not as bad as I used to think. It needs to be cooked longer than white rice and then allowed to sit longer after fluffing. It is even better a day or two later re-heated in a microwave. |

The wiki history really has nothing much to do with today's sushi. You are right, the rice is the most important thing about today's sushi. |

Originally, Japanese farmers meant to eventually consume the fish and discard the rice. If later generations want it different, then so be it. |

But the freshest fish on bad rice is still crappy sushi. > No interest in trying it again. That's your M.O. Never concede that there might be a better preparation available, and just give up. I used brown rice only for 2-3 years then I got tired of the taste. Haven't used it in years, just long grain white rice now. |

It still contains the rice bran, hasn't been stripped and polished, so yes, it has a different texture and taste. It's not for everyone but I don't mind it. And it doesn't work well for everything. It wouldn't work well with red beans & rice, that's for sure. Jill |

We do eat a lot of rice but I am the only one who likes brown rice on occasion. Charlotte lives in California and even before that, it was too much trouble to make 2 batches so white it is here. Gets varied with Calrose or Kahiki medium grain or Jasmine, Basmati long grain. |

Brown rice sounds like a pretty goofy idea i.e., it was the stuff that hippies ate during the 60's. These days, even Asians eat the stuff. That's pretty amazing. I'd rather eat nothing. Yesterday for breakfast, I had some fried eggplant, crispy glazed pork belly, and a ham, mushroom, and cheese omelette. Such an omelette has as much umami as any Japanese or Chinese dish. https://photos.app.goo.gl/KLv5pVRaQ3fz6cCB9 |
