Lunch April 15
 
Leftover lamb curry and brown rice.

I have discovered that brown rice is not as bad as I used to think. It
needs to be cooked longer than white rice and then allowed to sit longer
after fluffing. It is even better a day or two later re-heated in a
microwave.

We had take-out sushi. The rice wasn't very good; I don't think it
was fresh. And rice is the most important thing about sushi.

I thought that "fermented rice" was historically the least important thing about sushi. Look up wikipedia's history of sushi.

I used brown rice only for 2-3 years then I got tired of the taste.
Haven't used it in years, just long grain white rice now.

All fresh is the most important thing for me. I tried sushi once and
only once. Came from a store deli. Something in it was off-smelling.
Probably too old. That did it for me - one bite and I was done.

No interest in trying it again.

That's a great way to test food. Go to a supermarket and buy food
that's gone off. Then never have that food again. Brilliant.

Granted that fresh fish is essential. But the freshest fish on bad
rice is still crappy sushi.

I am no a major rice eater. White is okay. I had tried brown in the past
and always ended up going back to white. After my incident last summer
my son stocked me up on brown rice and I am trying to use it up.

You can cut up the Spam and make tiny musubis. You hubby can eat them by the hand full. That's a whole lot of fun for the kids. :)

I can't say if that was tiny musubi or regular size sushi. Sushi has vinegar rice and musubi is made with plan rice. My daughter ordered that dish and I didn't try it. I ordered some fried salmon bones and cold noodles. My daughter orders the fancy stuff like spicy ahi poke on fried won tons.

As you pointed out, you have to know it takes longer to cook than white
rice. It still contains the rice bran, hasn't been stripped and
polished, so yes, it has a different texture and taste. It's not for
everyone but I don't mind it. And it doesn't work well for everything.
It wouldn't work well with red beans & rice, that's for sure.

We do eat a lot of rice but I am the only one who likes brown rice on
occasion. Charlotte lives in California and even before that, it was
too much trouble to make 2 batches so white it is here.

Gets varied with Calrose or Kahiki medium grain or Jasmine, Basmati
long grain.

Salmon bones is poor people food. You fry up parts of the fish that's usually discarded. I like it better than regular salmon.

You'll be sorry. Nasty stuff that shouldn't be in those cans. Some
people seem to like them. Some people (like me) don't. Look up the
history of salmon canning. A good historic read is in James Michener's
book, "Alaska."

The canned salmon industry took off once canning food for long shelf
life was perfected. Salmon used to be a local only food but with
canning, all of the sudden everyone could get this.

To save money, the companies would include lots of the small bones and
they were cooked to soft but crunchy. As salmon was new to many, they
learned to accept the bones. This tradition carries on to this day.

I have a small can of boneless salmon (size of a tuna fish can). I've
also had fresh salmon steaks (farmed). What I won't ever buy again are
those large (16oz) cans of salmon with bones....garbage food.

The "bone in" cans are often Pink Salmon too which is the least
desireable of the salmon species.

Brown rice sounds like a pretty goofy idea i.e., it was the stuff that hippies ate during the 60's. These days, even Asians eat the stuff. That's pretty amazing. I'd rather eat nothing.
Yesterday for breakfast, I had some fried eggplant, crispy glazed pork belly, and a ham, mushroom, and cheese omelette. Such an omelette has as much umami as any Japanese or Chinese dish.

Sorry Gary but totally missed this one.

The 'salmon bones' are a bit of a knock off of Ahi/Aku bones and
delicious treats. Remind me and will post you a recipe. I'm only
aware of this in Hawaii and may be natice Hawaiian cookery,

This morning I ate smoked pork belly, eggs, and fried potato. Not much umami but a great meal anyway.

The fried fish bones are simply frying the waste part of the fish after filleting. There's all kinds of ways to do it. In this case, I dipped the bones in egg and then in corn meal before frying. You don't eat the bones. This treat is tricky to eat. Don't try this at home unless you're an expert eater.
As far as canned salmon goes, eating the bones in canned salmon is mostly a trick one does to gross out little children.
