![]() My brother brought in six cans of sliced beets from his house that no one will eat. I've opened two cans over the last few weeks and I can see why. Just so darn bland and I avert my eyes each time I pass by those four remaining cans. A bit of searching and digging and I've found a 'recipe' to turn those bland red slices into 'pickled' beets. They will need to chill at least four hours before consuming but a quick taste and the liquid does taste like pickled beet 'broth.' 1 can drained sliced beets 1 small onion sliced 1/2 cup distilled white vinegar 3 tablespoons of sugar 3 whole cloves Place all ingredients in a saucepan and bring to a boil; remove from the heat. Cool to room temperature then transfer to an airtight container, seal, and refrigerate at least 4 hours before consuming. I'll give a report tomorrow on how well these turned out. |

Funny how things turn out. My son never had beets in the house because they are one of the few things my wife really hates. He loves pickled beets. I grew up eating beets and can take them or leave them. The pickled ones never did much for me. |
