My brother brought in six cans of sliced beets from his house
that no one will eat. I've opened two cans over the last few weeks
and I can see why. Just so darn bland and I avert my eyes each
time I pass by those four remaining cans.

A bit of searching and digging and I've found a 'recipe' to turn those
bland red slices into 'pickled' beets. They will need to chill at least
four hours before consuming but a quick taste and the liquid does
taste like pickled beet 'broth.'

1 can drained sliced beets

1 small onion sliced

1/2 cup distilled white vinegar

3 tablespoons of sugar

3 whole cloves

Place all ingredients in a saucepan and bring to a boil; remove from
the heat. Cool to room temperature then transfer to an airtight
container, seal, and refrigerate at least 4 hours before consuming.

I'll give a report tomorrow on how well these turned out.

I'm quite pleased how these doctored up sliced beets taste; very much like a
pickled beet which was what I was attempting. My brother gave them a thumbs
up as well and he likes the 'pickled onions' in the mix, too.

I've never liked pickled beets though amny do and the world would be
boring if we all ate the same ways.

I found the glass jar (non-pickled) ones suit me. They have an earthy
flavor some/many might not like but I do. Canned ones? I am with you
that they are unedible.

Funny how things turn out. My son never had beets in the house because
they are one of the few things my wife really hates. He loves pickled
beets. I grew up eating beets and can take them or leave them. The
pickled ones never did much for me.

I really enjoy them but it's not something I want to eat every week. I'll
probably doctor up another one of the remaining cans in perhaps two
weeks or so.

After I read the first few sentences of you post, I just went down
and make a batch of bloody Cesar pickled baby beets in about 90
seconds. They'll be ready to eat tomorrow.

Can of beets, drained of 2/3rds juice, Clamato to cover, shakes of
worcestershire and hot sauce, a little celery salt, and 2-3 TB of
vinegar.
