I love pineapple upside down cake. I use crushed (well drained) pineapple now instead of rings.
It is much easier to cut and serve. But our desserts today are apple crisp (my DIL's favorite), French silk pie, pumpkin bars, and ice cream to go with. We might as well skip our dinner. ;-)) N. |

She stuck her finger in it and sniffed it. It was chocolate. Ha ha. The manager of her apartment building did the same thing and came up with the same conclusion. They have no idea how gallons of chocolate ended up on the road but my suggestion is that they be on the lookout for some goofy looking, orange dudes driving a 1971 Wonkamobile. My guess is that real cherries and maraschino cherries contain too much water to cover with chocolate. I'd use the cherries used in fruitcakes instead.. |

Dave, sometime in my mid-married life, Crystal Sugar had a contest to name an apple cake dessert
for which they published the recipe. I copied the recipe, calling it "No Name Apple Cake." I don't know that they ever chose a winner...it uses diced apples and the cake seems to be a basic spice cake. It is really, really good, and I usually make it in the fall. It gets dusted with powdered sugar when cool, to finish it. I usually bake it in a jelly-roll pan, as I recall. (I haven't made it in a couple years.) N. |
