I love pineapple upside down cake. I use crushed (well drained) pineapple now instead of rings.
It is much easier to cut and serve.

But our desserts today are apple crisp (my DIL's favorite), French silk pie, pumpkin bars, and
ice cream to go with. We might as well skip our dinner. ;-))
