Here is my (my mother's) pie crust recipe:

2 cups flour (White Swan)
1.5 sticks unsalted butter, 60F in temp (cool room temp)
1 tsp salt

Cut together with forks until butter lumps are tiny (squeeze thru fork tines) and flour covered.

Add 1/3 cup COLD 40% cream, stir together briefly! Add sprinkle of cold water if not coming together into dough rapidly. STOP STIRRING when dough comes together. Leaving a little unmixed is superior to mixing them in! You can press them together later so now bunch up into a lump gently and put in plastic wrap to completely cover and and let rest for 1 hour min. in cool place before working. Overnight in cool place best. Can be refrigerated or frozen, but let come to cool room temp (60F-ish is perfect) before working.

and says "Don't ask, just do it." I think that's funny and I guess she's

I don't think one makes pastry daily, so when I do make pastry I
always use lard. I have no excess weight.

Lard does not make one fat. Lack of proper balanced diet and lack of EXERCISE makes one fat! And excessive use of ALCOHOL!

Anna Olsen uses a lot of butter and cream in her cooking. Having met
her several times I can tell you that she looks a lot heavier on TV than
she does in real life. She told me that rich things are more satisfying
so you don't eat as much. There is a lot of truth to that. When I used
to make ice cream I found that one scoop of that stuff was enough. My
mother used to make mince meat pies with a lard crust, and one small
slice of that was very filling.

Well, yes and no. Historically we humans always used animal and vegetable fats in our diet, but with the advent of "Better Living Through Chemistry" we developed many more dietary fats chemically. The "partially hydrogenated" fats in particular is NOT particularly good for humans to consume in excess or exclusively in our diets!

And *I* use a lot of "all butter"! And I am SHRINKING! :-)

Not necessarily. Ina, like a good many of us, is overweight because she and
the rest of over eat and mostly the wrong things. But lard has more unsaturated fats than saturated fats whereas butter has more unsaturated fats.
But there's more to it than just saturated and unsaturated fats.

My mother used lard for all her pastry (and she was an excellent baker)
but I use half lard and half butter for the flavour. Also all butter for
my d-i-l who is a vegetarian (but eats fish).

I'm not shrinking but I have a few indulgences in my life that I'm going to
satisfy.

I don't own a full length mink coat
I don't drive a Bentley Mulsanne
I don't have a vacation home on the Riviera.

But I do treat myself to:

Whole milk
real butter
good cheeses
rich desserts when the opportunity arises
satellite radio in my car

Pretty sure there are many other indulgences but these come readily to mind..

My mother was a good baker and always used lard for pie pastry. She
always raved about my pies. Maybe she was just being a good mommy and
complimenting me. I made it the same way she did, but I used Crisco
instead of lard for dessert pies. I use lard for meat pies.

To say nothing of the fact that the really fat men (cooks, hosts) on TV are
not held to the same scrutiny. Most really good tv cooks have a bit of meat
on them.

I find Ina a pleasant TV personality, but it's true that many of her
recipes (that I've seen) are about mixing butter, full cream and creme
fraiche. Which explains her weight.

On the other hand, I wouldn't trust a cook who looked like Mick
Jagger. His skin looks like a sock with too small a foot in it.

True, and they say that Giada DeLaurentis a very tiny cook who cooks with
the same type foods that Ina does, doesn't eat the food she tastes on her
shows, but instead has a bucket that she spits it into. Now, I don't know
the truth of that, but it would be disgusting to me. Give me Ina any day.
