I haven't eaten at a Long John Silver's in at least 16 years. There
aren't any around here so I have no idea if they have gone downhill. I
*do* know it was a franchise operation and not are not all franchises or
managment/employees are the same.

They really did (at the location I occasionally ate at) have some tasty
fish. And hush puppies.

No idea. KFC and McDonald's was exotic foreign food to them at one
point. Maybe their palates have matured. As for me, Chinese food
was all I ate when I was on a 30 day trip through China.

Sadly, too true!

We had an Appleby's in our town. Served the best fish n' chips I've
ever experienced. Big ol' fat chunks of cod, breaded to perfection,
and good chips (Frenchfries). Five miles down the road was another
--and newer-- Appleby's. Their fish n' chips was horrible. Inedible,
in fact. Basically, breaded talapia and served cold. Ick!

That depends - the Jaques Pepin way is to dust the fillets in flour,
then egg wash them, then into the oil and buttered non-stick pan.

That's really a fish saute though.

And I often times add a bit of celery salt and some white pepper.

For a truly "fried" (deep) fish a good batter is key.

I like a nice beer batter:

2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Dash Old Bay Seasoning
1 bottle brown beer, cold

Of course if you're a tempura person any good tempura batter mix with
some nice cold club soda will suffice, thin as possible in texture.

What I will never do is re-use deep fryer oil that has seen fish, or any
other seafood.

And I mostly prefer to fry in a cast iron high sided pan.

Any brown bits get tossed out with the oil - one time use only.

I would _never_ make a bed of old deep-fried bits from the day's cooking
to serve anything on.

Did you get anywhere far enough north to get into the super heavy and
hot pepper dishes?

Some of those look so lava-like I know I'd be doomed from the get go.

When I first started working on the road I ate there a few times. I
never cared much for the food and my guts never appreciated it either.
Later on I reluctantly went there a couple times with co-workers. Later
on I was more adamantly opposed to it. About a year and a half ago I
got a coffee at one because a number of people told me how good it was.
I was not impressed.

I just had some McDonald's coffee this morning. I wouldn't call it good
stuff. It didn't taste very much like coffee. Mostly it's caffeine in
the morning which is a very good thing. Good coffee is something rare
that you get every now and then.

What we had at McDonald's was Portuguese sausage (linguica), rice, and
scrambled eggs. It was so-so. I guess the biggest news at McDonald's is
that they've gone back to deep-frying their apple pies. Smart move.

Some things vary by region. The coffee here is acceptable. I'd say
"meets expectations" but a senior coffee is only 79 cents.

No rice or linguica here either.

It is totally acceptable. Unfortunately, I can still feel the after
effect of the coffee in my guts. It's a tad bit uncomfortable. I prefer
coffee that makes me feel warm and happy inside. OTOH, you gotta drink
coffee in the morning.

Probably. We went all over the place from Bejing to Tibet to the
Xinjiang Uyghur Autonomous Region (Muslim), but the group I was with
was not filled with adventuresome eaters so we missed out on a lot...
even in Sichuan province.

I have a feeling their coffee is local or maybe even left up to the
franchise owner, because our local McD coffee was vile for decades,
but it's been top of the line great for at least the last 10 years,
maybe more.

Where's the beef? That said, I'm addicted to McDonald's Jalapeno
burger. By addicted, I don't mean I eat it everyday or even every
week - but when I'm in the car and want a between meal snack (I
normally eat once a day: dinner), that's my choice.

People with food intolerances often say that they have aversions to the
offending food. I have never liked milk, cream, ice cream, whipped cream,
cream cheese, or yogurt. But I have liked some cottage cheese and other
cheeses. Oddly though, I also used to like creamed chipped beef and sausage
gravy.
