![]() Yesterday I made 10 dozen sausage rolls for the freezer. They make great snacks for times when the teenagers say "I'm hungry". Seven dozen actually made it into the freezer! Dinner last night was a beef stew topped with parsley dumplings served with honey carrots and steamed snake beans and broccolini. I have some butter puff pastry left over from the sausage rolls and a bunch of shallots from a friend so I am going to make this for lunch. http://www.bbcgoodfood.com/recipes/3...ot-tarte-tatin Husband went fishing yesterday, he came home soaked to the skin but bearing one of these http://www.fish.wa.gov.au/Species/Pi...s/default.aspx and a monster one of these http://www.fish.wa.gov.au/Species/WA...s/default.aspx They are two of my favourite fish.The dhufish has been filleted and now resides in the freezer. The pink snapper just fits in my baking dish (with its head removed) and will be dinner tonight. I will encase in foil, put some herbs, onion and lemon in the gut cavity and over the top, splash in some chardonnay, seal up the foil and bake. I will make a butter/lemon/white wine sauce with the juices and serve over buttery mash with a salad on the side. If the weather is fine over the weekend I will take a bunch of the grand kids to our favourite mussel collecting spot and harvest some to make chili mussels. JB |

We took my mom out to eat. Still using up freezer food. Wouldn't you know that husband developed a mouth ulcer when I planned to serve him hot salsa. So instead he has gauc and sour cream. I have salsa verde. We are both having beef taquitos (365, Whole Foods), pinto beans from scratch and some rice made with green peppers, cilantro, tomato sauce and vegetable stock. I didn't want to make it spicy. Daughter is having mashed potatoes, scrambled eggs, raw carrots and red peppers. |

I think puff pastry has butter in it and I'm not a big sausage fan. I just can't envision teens wanting to eat such a thing. But maybe that's because most of the ones I am familiar with are dancers and they tend to eat stuff like grapes and carrots. |

Perhaps sausage is more commonly eaten in some places versus others. I don't hear of too many people eating it here. Perhaps once or twice a year I will make kielbasa or Polish sausage, mainly because I find a good sale. Perhaps Bratwurst once a year. Husband is really the only person who eats this stuff and I don't think they are his favorite foods. A little more often I will do breakfast type sausages only because they are cheap and quick to fix. I keep hearing and seeing of that sausage ball recipe that has Bisquick in it. Supposed to be a great party food but I've never been to a party where they served it. I did go to parties in CA where they commonly served a cheese dip of Rotel, Velveeta and sausage but I'm not sure what kind of sausage. It was okay but I think it would have been better with either no meat or ground beef. Sausage is just so fatty. I can only eat it once in a while and in small quantities. I don't remember having sausage too often when I was growing up. I think we had bacon more often than sausage and we didn't have that too often either. |

We also had beef stew. It was made out of the trimmings from a beef tenderloin, so it was *really* good. (We buy whole tenderloins a couple times a year when they are on special, and cut them into steaks. The stuff trimmed off is used for stew or stir-fry.) Sliced carrots and cubed potatoes in the stew. No dumplings, but I had a piece of bread and gravy, which was just about as good. It's so hot here that beef stew would seem a strange thing to be cooking, but I just had a hysterectomy a couple of weeks ago, and my appetite has been trashed. It's just starting to come back a bit. Beef stew is what I fancied, so that's what my husband made for me. Doris |

I use a good quality plain beef sausage mince from my butcher, it needs to have enough fat that they are juicy without being so fatty that fat runs out everywhere. If you cannot buy loose sausage mince you can take the skins off sausages and use that meat. For every kilo of sausage mince add: 1 small onion very finely diced 6 slices of stale white bread, crusts removed soaked in water and squeezed out a good shake of dried mixed herbs (or herbs of your choice) Mix with your hands until the bread is completely broken up and distributed through the mix, you should not be able to see any lumps of bread. This mix will give you three dozen sausage rolls and will use up 4.5 sheets of pastry. Lay a sheet of pastry out on a board large enough to hold it. Put mixture all along the closest edge to yourself. You want to be able to get two logs out of every sheet so don't overload or you will end up using more than half a sheet of pastry. Roll over about a half turn and then flatten the uppermost surface, this will be the inner overlapped join under the roll. Roll over until this surface is underneath and overlapped, make sure you have used some water, egg or milk to wet the seam so it sticks. Cut the pastry along side the log and repeat for a second log. Paint each roll with egg wash and cut into halves and halves again, making 8 sausage rolls per sheet of pastry. Bake in a 220C oven for 20 - 25 minutes. I put them on baking paper. The better spaced you have them the better they will cook on top and sides without the bottom burning. Serve with ketchup, bbq sauce or whatever takes your fancy. Thi is my basic recipe and the favourite of my family, but I have made many variations with a mixture of beef and pork. garlic, chili, fresh herbs etc. JB |
