Default Dinner 1/27/2009 - What's on your menu?

Veal piccata
Creamed spinach made with whole cream and nice grated parmigiano-reggiano.

What's on your menu for dinner tonight?

Egg rolls
Stir-fried beef and vegetables over
Pan-fried noodles
Jasmine rice because I wanted to cook some of it.
Maybe some salad, maybe not.

Veal piccata sounds good as does the creamed spinach, though I'd pass on
the cheese, myself.

I made curried chicken with coconut milk. Heat some oil in a pan and
add a big spoonful of medium curry paste. Stir it around and add a
chopped onion. While the onions are softening slice a red pepper and
slice up boneless chicken breast. Season the chicken with salt and
pepper. Toss the red pepper and chicken into the pan. When the chicken
is cooked add a half can of coconut milk and about a tablespoon each of
fish sauce and lemon juice along with some grated lemon zest. Add
cilantro (I used 5 frozen cilantro cubes). Serve on rice.

Kielbasa with horseradish
Sauerkraut
Buttered egg noodles with dill weed..........

Not just going Polish, but we're expecting a 'big' snow and this is to
generate some 'heat' if the power goes out (snort).

Tonight we had spaghetti and meatballs - I made the meatballs last
month and froze them, so all I had to do tonight was cook some pasta,
thaw the meatballs, and thaw out some tomato sauce that was also in
the freezer. We also had half a loaf of garlic bread left, and a green
sidesalad. Yum!

You'd pass on Reggiano???!!!!!

You don't like the taste? Or is it a cheese intolerance thing?

No salad. I bought the egg rolls from an Asian deli not too far away
and reheated them for dinner. LaTwerp is visiting next week and she
likes eggs rolls. At 75 cents each, it's half the cost of buying them
in a restaurant. Guess where we'll be eating.

The beef and vegetables was great. Baby bok choy, pea pods, green
onions, fresh water chestnuts, bean sprouts. Some oyster sauce drizzled
on top; garnished with sesame seeds. The jasmine rice is nice. Had
jasmine tea with the meal.

Gung hay fat choy!

Sounds good and not much thinking involved. I like those. :-)

Spaghetti here tonight, too. Whole wheat pasta with spaghetti sauce with
fresh ground browned beef and a little Italian sausage and low fat motz
cheese on top and browned in the oven. Got lots of leftovers to freeze in
vacuum sealed packets for later.

I used Byriani this time. I have tried it with various curry pastes, but
this one has been pretty good.

Arugula, upland cress, carrot, and roasted beet salad.
Penne pasta with broccoli, tofu, and garlic. All of the
above from the Berkeley Farmer's market except for
the Trader Joe's whole-wheat penne.

I like yours better. ;-)
At work lately, I'm just doing whey protein shakes and the occasional
Wylers cube if I get hungry and really need to eat something.

I only eat real food at home, and that will be only one high protein
meal.

<sigh>

It's working, but it's SLOW!!!

My freakin' T-4 level has dropped back down out of normal range again.
Does that every time I cut calories below 1K per day. :-(

F-ing slow metabolism <grumblegrumblebitchmoanwhine>...
