I made curried chicken with coconut milk. Heat some oil in a pan and
add a big spoonful of medium curry paste. Stir it around and add a
chopped onion. While the onions are softening slice a red pepper and
slice up boneless chicken breast. Season the chicken with salt and
pepper. Toss the red pepper and chicken into the pan. When the chicken
is cooked add a half can of coconut milk and about a tablespoon each of
fish sauce and lemon juice along with some grated lemon zest. Add
cilantro (I used 5 frozen cilantro cubes). Serve on rice.
