In the 70's or 80's I had a recipe for using oatmeal as a side dish,
like rice. It involved tossing the oatmeal with something, maybe egg, sauteeing it briefly and then adding some amount of broth or other liquid. Does anyone have this recipe or technique? |

You toss 1 3/4 C. old fashioned oats with an egg (or two egg whites). Sautee your veggies (onion, pepper, whatever) then add the oatmeal and sautee til it is dry and separate. Add 3/4 C. chicken broth and any herbs or spices you want and cook til the liquid is absorbed. |

![]() .. Not exactly side dishes, but: I make a kind of Mexican soup with green peppers, tomatoes and chicken broth, which starts with pan-toasted oatmeal as the thickener. And today's Boston Globe had a recipe for (I believe) trout coated with processer-ground oats. Felice |

This might be something that kasha lovers would appreciate; the cooking technique appears to be very close to the way kasha varnishkas is prepared. (I happen *not* to be a kasha lover.) Bob |
