Default Side dish

Had to use up a yellow squash but I'm getting bored with steamed with
butter. So I started cooking ingredients thinking about what to do with
it.

Sweated some sweet onion, then garlic in olive oil. Set aside. Chopped
some bacon and crisped it. Turned off the heat and added back the
onion, garlic and oil. Sliced thickly some yellow squash and thinly
sliced potatoes with the mandolin. Put them in the pan with the
aromatics and bacon to coat while I made a white sauce. I added a
little bit of romano to the white sauce to use some up. Hope it wasn't
too much.

Layered the potato squash mixture with some cheddar, then poured on the
white sauce and it's now baking.

We'll see. LOL

It turned out really good! But I see my error about the cheese in
the white sauce, it was ricotta.

I had a fairly large one yesterday (compared to the baby sizes we find
in the store). I stuffed it in a similar fashion to the way I stuff
zucchini and it was delicious.

At the very least, you needed some parmesan in there to give that
ricotta some character.
