Default Putting it by...oh my!

Arrived home late last night from my weekly 6 hour commute and up early this
morning to check the *crops*. As has been mentioned before, the garden is in
horrible shape this year due to my travel schedule, but it looks like I'll
have enough maters for one run of salsa.(guessing around 40 pints) Came in
after looking over the knee-high grass (4 acres worth) and obsessing as to
how I'm gonna get the yard cut, salsa fixins picked, prepped and canned all
before Sunday am's SS, Church and departure for the *commute* ~2pm.

Suddenly....THE CALL came in......

Me- "Hello"
Dad - "How many do you want?"
Me - "Say again?"
Dad - "Peaches, how many do you want?"
Me - "Just a few to eat, I'll take some with me to NC next week. They're
finally starting to get ripe, huh"
Dad - "Well the last couple of days they've been coming on strong and
started falling off in droves. We picked 5 bushel so far and your Mom still
has some jam left from last year and doesn't plan on doing much....so how
many do you want? 3 bushels, 4?"
Me - (Thinking "Well Crap!") Saying "I'll be over this afternoon, we'll work
something out" (Thinking...."Fuggin grass.....need me a goat or 3") Saying
"BOYZ.....get yer lazy carcasses outta bed, we got work to do!"

Don't get goats they prefer to browse on brush, get a few head of sheep
and maybe a calf or two. That will give you more stuff to preserve. <VBG>

Do you have any freezer space? Slice or chunk them and add a couple
tablespoons of OJ to the freezer bag. Freeze flat and when solid, stand
them up in a box in the freezer, ready to go. They're best eating later
on when there are a few ice crystals in them.

Smash, add some OJ as above and you've practically got a smoothie in
hand, Dude.

Oh, did I mention that I hate you? "-) I am so damned jealous of your
bounty I could just spit! Really!! LOL!

Make that two more that are jealous. We lost our peach tree in Rita in
2005 and it was just at the peak of bearing.

That is so wonderful. Our second tree is ripening (for the first time)
and the deer got at it last night and ate a couple dozen peaches. Mr.
Bill went out and netted it this evening so I'm hoping that helps. It
worked with the cherries. A couple years ago, we had a missing tomato
plant--- cage and all! We later learned that a stag had been observed
in the neighborhood with the cage on his antlers! We later found it
back in the woods, a total, beat-up mess.

Have fun with those peaches! Today, in addition to 7 pints of zucchini
relish, I put up 7 half-pints of Peach-Rum Sauce from the Ball Complete
Book of Home Preserving. Just had some on ice cream and it was very
yummy. So I can recommend that and an easy addition to the peach
repertoire. I used Meyer's dark rum so I didn't even bother with Fruit
Fresh.

Freezer space, I've got and will likely go that route.....this coming
weekend.

Update....

The BAD,
The yard was in worse shape than I thought and took most of the day to get
finished. Picked the tomatoes and wound up pitching 2 out of 3 into the
compost pile....the garden is in pitiful shape this year.....fruit trees are
awesome, but the veggies are pitiful. We'll have beacoup bushels of apples
this year if anybody wants to drop by NE Jawja and pick'em up.

The GOOD,
Got enough maters to put up 10 pints of salsa and found homes for all the
peaches this week. The trees looked like they hadn't even been picked at all
and most of the limbs were dragging the ground, so I'll have a chance to get
some for me this coming weekend.
