My suggestion would be to make it kind of how Wahoo Fish Taco® makes their teriyaki veggie bean burrito. It's low-fat and really tasty. Mexi-Asian, kinda. Red bell peppers, onion, minced garlic, a touch of minced ginger, celery, cilantro or parsley all sauteed in a teriyaki sauce, stuffed into a burrito with herbed rice and salsa. You could add chicken, beef, pork or whatever you want to that as well. It's surprisingly good! Add whatever veggies you want. I haven't had one of these in 10 years; I'm just trying to remember what all goes into one. kili |
