I need a nap, but I'm thinking about fried chicken. Got a large chicken at
WalMart for $.67 cents a pound. It's easy to cut out the backbone and chop it up, so I'm thinking I'll dredge it in a cornmeal mix after chopping it and I'll fry it up. Can do a salad on the side, peas or okra. Have some catfish, too, but it's an either or deal. I'm craving fried chicken. What's everybody else having? kili |

What you could do is sub the spaghetti with spaghetti squash then top with tomato sauce. It is a fair imitation of regular spaghetti while being low carb and vegetarian. It makes for a real cheap meal! Just in case you don't know how to cook it, cut in half and remove any seeds. Place cut side down in pan with water. Bring to a boil then let squash steam a little. Using a fork remove the spaghetti squash which will resemble regular spaghetti. Top with your favourite sauce. Oh kili, I was going to tell you I regularly check the vegetarian websites and newsgroups because they have great ways to do veggies for something a little different. Since you are doing the low carb thing it might be an idea for you. They come up with some really neat ideas! |

Then I turned some of the leftover mixture into a chili-mac casserole with macaroni and some cheese. I used the rest of the chili-spiced meat mixture yesterday to make a medium-sized pot of chili. So I figure I'll be eating more chili tonight. I didn't get around to making cornbread so I'll have some corn chips on the side. The weather cooled off so the windows are open (yes, it's raining); I don't want to heat the oven and warm the place up as long as I can enjoy having the windows open without sweating. Your fried chicken sounds pretty good, although I've never had it prepared with a cornmeal coating mixture. I actually like oven-fried chicken (not when I don't want to use the oven) coated with those instant potato flakes. It wouldn't fry well, though, and of course potatoes (even the fake ones) and flour are mostly a no-no in your house. Jill |

We were going to go have dinner at this seafood place nearby that my FIL (in-laws are here visiting from CA) absolutely loves, but a lot of the restaurants in this area aren't back up and running yet after Rita, so I've got some pork tenderloins marinating in a lemon/oil/garlic/spices mixture. We'll grill those tonight and have them with brown rice pilaf, a salad, and some sort of veggie (to be decided on later). Rockfish Seafood will have to wait til tomorrow night... Mary |

I sprinkle on the dreaded onion soup powder mix and I let it go...Oh! fat side up. No liquids no trivets, just the Picnic roll. I let her cook about 6 hrs on high or 10+ hours on low. Makes for a good ham feast for supper and meat for lunches for most of the week. So next week for lunch I'll be doing chef salads, ham stir fries...ham and cheese style casseroles and ham and grilled zuchinni or asparagus. -- The eyes are the mirrors.... I've posted my recipe before. Whenever I serve it to guests they always ask for the recipe but I doubt any of them make it after reading the recipe. I devote a whole day to cooking it after the meat, vegetables, herbs and seasoning marinate in red wine for a day. Then separating the meat from the marinade and vegetables, drying the meat on paper towels, browning the meat in several batches in bacon fat and vegetable oil. Then cooking for a few hours, then separating the meat *again* from the stewing liquid and the vegetables. Straining the vegetables to extract all their flavor and discarding them. Then returning the meat and strained stewing liquid back into the pot and adding peeled, quartered potatoes. Cooking that till tender. Cook up more bacon till crisp. Sauté mushrooms in the bacon fat, add that to the pot and simmer some more. Add peeled baby onions and peas, simmer some more and serve topped with the chopped crisp bacon. I make this about 4 times per year and I bi*ch and moan every time but no stew I've ever had packs this much flavor! It is also very nice to come home from work, defrost a bag, heat and serve. I did the tomatoes that I used in the tart last week. Slow cooking over low heat in the oven for several hours along with herbs, garlic slices and some olive oil. They dry out enough so that the tart doesn't get soggy. I cheated and used an all butter purchased puff pastry though for the tart. Kate |

But, for dessert, I made this: Mountainberry Crisp 6-8 large apples (I used Macintosh, Granny Smith, and Fuji) 1 pint blackberries (I used fresh) 1 pint raspberries (again, fresh) 3/4 cup sugar ( or Splenda for baking, see note) 3 tbsp flour 1 tsp cinnamon (I love cinnamon, used about 2 tsp) juice of 1/2 lemon NOTE: If using Splenda, make sure you use the baking kind or the filling won't thicken properly. Combine, making sure sugar and flour are well mixed with the fruit. Top with: 1 cup flour 1 1/3 c light brown sugar 1 cup oats 2 stick butter I pulsed everything except 1/2 c oats in the processor until it looked crumbly, like pie dough. Then mixed in the remaining oatmeal. Spread crumb mixture over fruit and bake in a 375* oven for 55 minutes. Top will be deep golden brown and filling will be bubbly. Cool slightly and top with cinnamon or vanilla bean ice cream. It turned out delicious, and I'm planning on having a couple bites in the morning before class! Ergo late dinner. I have Brussels sprouts in the oven with Dijon mustard and soy sauce and olive oil. I'm about to zap some frozen broccoli stems and pieces with oil and soy. Out on the gas grill I have a whole chicken going. I stuffed fresh basil under the skin along with a garlic/chipotle/lemon paste I had left from last night's dinner. The chicken came with two livers and a heart which I simmered till they were done: Category 5 dog snax! I have to bribe the dachshund to pee outside these days. It's not so bad except when she takes a dump next to the grill. modom |

We had sauteed flattened chicken breast rolled in breadcrumbs flavoured with parmesan cheese and pasta tossed in a mixture of halved cocktail tomatoes, olive oil, white wine vinegar, garlic, basil and s&p.
