Lunch/Dinner
 
I need a nap, but I'm thinking about fried chicken. Got a large chicken at
WalMart for $.67 cents a pound. It's easy to cut out the backbone and chop
it up, so I'm thinking I'll dredge it in a cornmeal mix after chopping it
and I'll fry it up.

Can do a salad on the side, peas or okra. Have some catfish, too, but it's
an either or deal. I'm craving fried chicken.

What's everybody else having?

I'm wanting french dip roast beef but also watching the Eagles vs.
Raiders and rootin' for the Raiders, in Eagles territory, so I don't
know if I'll make it to the kitchen after the game, alive.

I'm still using up leftovers from your beloved sloppy joes. ;) I had made a
large pan of the meat mixture. Then I turned some of the leftover mixture
into a chili-mac casserole with macaroni and some cheese. I used the rest
of the chili-spiced meat mixture yesterday to make a medium-sized pot of
chili. So I figure I'll be eating more chili tonight. I didn't get around
to making cornbread so I'll have some corn chips on the side. The weather
cooled off so the windows are open (yes, it's raining); I don't want to heat
the oven and warm the place up as long as I can enjoy having the windows
open without sweating.

Your fried chicken sounds pretty good, although I've never had it prepared
with a cornmeal coating mixture. I actually like oven-fried chicken (not
when I don't want to use the oven) coated with those instant potato flakes.
It wouldn't fry well, though, and of course potatoes (even the fake ones)
and flour are mostly a no-no in your house.

We were going to go have dinner at this seafood place nearby that my FIL
(in-laws are here visiting from CA) absolutely loves, but a lot of the
restaurants in this area aren't back up and running yet after Rita, so
I've got some pork tenderloins marinating in a lemon/oil/garlic/spices
mixture. We'll grill those tonight and have them with brown rice pilaf,
a salad, and some sort of veggie (to be decided on later). Rockfish
Seafood will have to wait til tomorrow night...

I put the picnic roll in the crockpot. I sprinkle on the dreaded onion soup
powder mix and I let it go...Oh! fat side up. No liquids no trivets, just
the Picnic roll. I let her cook about 6 hrs on high or 10+ hours on low.

Makes for a good ham feast for supper and meat for lunches for most of the
week. So next week for lunch I'll be doing chef salads, ham stir
fries...ham and cheese style casseroles and ham and grilled zuchinni or
asparagus.

I made a large batch of beef bourguignon yesterday. I froze most of it but
will be serving some tonight with buttered egg noodles. I also made an oven
dried tomato, chevre and herb tart this afternoon which we'll probably dig
into.

About 7-8 lbs (The label IIRC said 3.27 kilograms). Comes in a net bag
inside of a vaccumed sealled plastic bag...usually close to the real hams
in the meat section. I like it because it's easy, real cheap and tastes
great. I do remove all wrappings before I cook it.

There was this commercial on foodtv yesterday, I wasn't
paying attention until I heard the voice say something about
making sloppy joe mac ... hey, that's Jill's recipe! It was a
recipe for Krafts, so I assume Manwich is one of their
products.

You've got to try the cornmeal mixture. Gosh, it's so much better than
anything you can buy! All we do is cornmeal mix, garlic, pepper and a
little salt and it gets so nice and crispy! It's absolutely yummy.

Lunch is hit or miss...don't know if I'll be eating it or not. More likely
than not, I'll slice off a few hunks of the longhorn Colby I got in
Wisconsin and have it with some crackers.
Dinner, penne pasta with sun dried tomatoes, grilled turkey tenderloin, and
a parmesan cream sauce. Prolly a few veggies too.

I'm still procastinating even though between posts the salsa is almost
ready to go on too cook. What you could do is sub the spaghetti with
spaghetti squash then top with tomato sauce. It is a fair imitation of
regular spaghetti while being low carb and vegetarian. It makes for a
real cheap meal! Just in case you don't know how to cook it, cut in
half and remove any seeds. Place cut side down in pan with water.
Bring to a boil then let squash steam a little. Using a fork remove the
spaghetti squash which will resemble regular spaghetti. Top with your
favourite sauce. Oh kili, I was going to tell you I regularly check the
vegetarian websites and newsgroups because they have great ways to do
veggies for something a little different. Since you are doing the low
carb thing it might be an idea for you. They come up with some really
neat ideas!

Thanks, sweetie! I've never personally made spaghetti squash because I'm
leery of it. I'm just gonna have to bite the bullet one of these days and
do it. Thanks for the reminder.

Dunno what I am having. Went shopping. I have some chicken, pork chops,
ground beef, sirloin beef medallions, and ham in the fridge. Have fresh
veggies, and salad fixings. Lots of ingredients for sauces and the like.
But.. I have had a busy weekend, concert, wedding, dance, and walkathon...
so brain is yelling eat out.. eat out.. no dishes or mess to clean up. lol
Might let the grandson decide when I pick him up from his lifeguard course.

Ohhhh fried chicken has it's place too ;-). Actually this beef bourguignon
is heavenly but a huge pain in the a** to make. I've posted my recipe
before. Whenever I serve it to guests they always ask for the recipe but I
doubt any of them make it after reading the recipe. I devote a whole day to
cooking it after the meat, vegetables, herbs and seasoning marinate in red
wine for a day. Then separating the meat from the marinade and vegetables,
drying the meat on paper towels, browning the meat in several batches in
bacon fat and vegetable oil. Then cooking for a few hours, then separating
the meat *again* from the stewing liquid and the vegetables. Straining the
vegetables to extract all their flavor and discarding them. Then returning
the meat and strained stewing liquid back into the pot and adding peeled,
quartered potatoes. Cooking that till tender. Cook up more bacon till crisp.
Sauté mushrooms in the bacon fat, add that to the pot and simmer some more.

chopped crisp bacon.

I make this about 4 times per year and I bi*ch and moan every time but no
stew I've ever had packs this much flavor! It is also very nice to come home
from work, defrost a bag, heat and serve. I did the tomatoes that I used
in the tart last week. Slow cooking over low heat in the oven for several
hours along with herbs, garlic slices and some olive oil. They dry out
enough so that the tart doesn't get soggy. I cheated and used an all butter
purchased puff pastry though for the tart.

LOL I don't fry food, except to pan-fry tilapia or other quick-cooking fish
in a very little bit of oil. The first time I fried chicken pieces back in
1982 the oil popped and fused my silk blouse to my chest where the oil hit
me. Not a good experience :( Took me at least 15 years before I tried
frying chicken on the stove-top again. It's just not something I do.

I think the key is low and slow. We fry our chicken on a really low heat -
prevents splattering - and it still turns out great. The chicken isn't
overdone, the coating is crispy and there isn't too much of a mess. A
breast can take about 20 minutes to cook (don't touch that, Sheldon!).

we're having a california-style hominy casserole with sour cream,
monterey jack, and green chiles, and some beans on the side. thought i
had black beans but it doesn't look like i do after all, so i'm cooking
up some red kidney beans with tomato paste, sort of a
mock-chili-without-spice concept. no salad tonight but some cubed
honeydew melon.

and a crumb-topped peach pe with vanilla ice cream for dessert.
yuum!

sounds like something worth trying. Maybe I could do an oven-fried

I am roasting a chicken tonight, for my first cooked meal in the
apartment here in Fairfield. I am cooking it a la Marcella Hazan,
Chicken with 2 lemons. It uses no fat..and is essentially no work....
And it tastes glorious!!!
I am going to modify it a bit this time though.. I got some Trinidad
seasoning at Penzeys when I went through Phoenix..and I am going to
try that along with the salt and pepper. It may ruin it, but ya never
know...
Along with that, a salad mix from Trader Joes...and a very ripe peach
for dessert!!!
Yay!!!!!!!! I am back in California where good and RIPE fruit
abounds!!!!

It must be a "chili" night, no pun intended. I made a large pot of chili
this morning. We had a small taste for lunch, and I'll soon be baking a
pan of cornbread to go with a bowl of chili for suppoer. If I waited for
it to be rainy and dreary in Phoenix, I'd either have an eternal wait or
I'd have to do it during one of our 5-minute cloudbursts.
