Default Poultry Seasoning "Substitution" ???


I've been poking around on the web and it seems as though 1 part thyme
to 3 parts sage is the popular combination. I usually would use
McCormick but what I have is old. Anyone have a tried-and-true
combination they use ?

I prefer to use my own combinations, so I don't have to worry about
finding / having the brand on hand, but I just haven't gotten around
to figuring this one out ... I guess the time has come.

Parsley, sage, rosemary, and thyme (Seriously. That song shoulda been
called "Poultry Seasoning"), and black pepper.

Heavy on the sage. Sage, thyme, and rosemary are all powerful
seasonings so be careful.

Penzeys Poultry Seasoning
A traditional style seasoning for poultry and stuffing. To make stuffing, use 1
/2 -1 tsp. per Cup. Great for making leftover turkey salad, just mix 1- 2 tsp.
in 1 /2 Cup regular or low-fat mayonnaise and 1 TB. lemon juice or vinegar. Add
a bit of onion and salt to taste, use to coat 2 Cups turkey or chicken.
Hand-mixed from: sage, white pepper, red and green bell peppers, lemon peel,
savory, rosemary, dill, allspice, thyme, marjoram and ginger.

A single suggestion: Bell's Poultry Seasoning.

My parents swore by it. My grandmother who was a food writer swore by it now
I swear by it. Martha Stewart called it the secret ingredient for successful
stuffing.

According to the box, it's "A blend of rosemary, oregano, sage,
ginger, marjoram,thyme, and pepper", so you could try mixing some
combination
of those spices.

Bell's is simply the best. It works in all poultry recipes, and it's salt-free.
You can control the intensity of the seasoning by adjusting the amount used.

(It's also good for making garlic bread, use it lightly).

I tried to make my own substitute and couldn't come close.
Look for the little yellow box.

Yes you could. But once I ruined a whole batch of stuffing with this kind of
experimenting, and I'm no kitchen slouch. It occurred to me right then that
the $2 or $3 for a box of Bell's seasoning is one hell of a good value.
Based on 7 known ingredients, you could still go through an infinite number
of different proportions until you get it right. They already have it right.
