I buy shrimp in either 1- or 2-pound bags (depending what I find at the store when I'm ready to buy). I cook perhaps two servings. My go-to recipe for leftover shrimp is on a salad with lime vinaigrette. Extra points if I have fresh poblano chile and ripe avocado to slice up onto the salad. Cindy Hamilton |
