A cod fillet, dredged in a little seasoned flour and pan-fried in a bit
of canola oil (Any neutral oil will do, don't get hung up on olive oil) and a little butter. It's a small but thick piece of fish, needs to cook about 12 minutes to crispy outside and opaque yet flaky inside. I'm steaming some broccoli florets to go along with it. In the oven, some (from frozen) Savannah brand hush puppies. Fish dinner for one - simple and delicious! ![]() Jill |
