Â* While out and about on Friday we picked up a couple of yellow squash
, which my wife made plain better be on the table for dinner last night so ... I grabbed a bag of frozen okra chunks (last year's) and made up some light batter and fried both up in about an inch of veggie oil . Went really well with the grilled chicken breast (also picked up on Friday , 2 10 pound bags) and baked potatoes . It must be pretty good , she took the leftovers for lunch today - to eat cold . These were some giant breasts , over a pound each side . I grill these whole then slice when served . Makes for great sandwiches and makes a really nice chef's salad . I used a simple batter for the squash slices and okra - 1 part flour to 2 parts self rising white corn meal , an egg and enough milk to get a thin batter . Salt and pepper to taste . -- Snag Yes , I'm old and crochety . Get off my lawn ! |

I cook it like my mom did; cut up squash, a good amount of diced onion, a bit of bacon grease and a bit of water. Salt and a generous amount of black pepper, cover and cook until all are tender, stirring occasionally. If it's too juicy remove the lid and let the squash cook until most of the liquid has evaporated. |

I once tried to grow okra but it didn't do much good, I do remember wasps got on the blooms tho.

Slices go on a piece of wax paper on a cookie sheet and into the freezer . Bag 'em up loose and use as much as you want at a time . Unless you have so many plants that enough of them mature at the same time. |
