Fried Okry an' Yaller Squarshes
 
Â* While out and about on Friday we picked up a couple of yellow squash
, which my wife made plain better be on the table for dinner last night
so ... I grabbed a bag of frozen okra chunks (last year's) and made up
some light batter and fried both up in about an inch of veggie oil .
Went really well with the grilled chicken breast (also picked up on
Friday , 2 10 pound bags) and baked potatoes . It must be pretty good ,
she took the leftovers for lunch today - to eat cold . These were some
giant breasts , over a pound each side . I grill these whole then slice
when served . Makes for great sandwiches and makes a really nice chef's
salad . I used a simple batter for the squash slices and okra - 1 part
flour to 2 parts self rising white corn meal , an egg and enough milk to
get a thin batter . Salt and pepper to taste .

I really enjoy really good fried okra. I love yellow squash as well but
have never eaten it battered. I cook it like my mom did; cut up squash,
a good amount of diced onion, a bit of bacon grease and a bit of water.
Salt and a generous amount of black pepper, cover and cook until all are
tender, stirring occasionally. If it's too juicy remove the lid and let
the squash cook until most of the liquid has evaporated.

I've had battered fried yellow squash. It's very tasty! But battered
fried anything is not really my first choice. I'd rather have grilled
yellow squash.

I do occasionally make squash casserole. That's quite tasty. It calls
for sliced yellow crookneck squash, cornbread crumbs, etc. It's pretty
much the only thing I use my food processor slicing blade for. Must
have uniform slices of squash for the casserole. Oh, that and sliced
poatoes for scalloped or au gratin potatoes.

At any rate, I do like yellow squash but really don't want it battered
and fried.

I like the idea of squash sauteed with onion, pepper, etc. But I never
have enough bacon grease and I don't save it up for cooking with, so...
sorry I won't get to try that.

I once tried to grow okra but it didn't do much good, I do remember wasps got on the blooms tho.

Â* Mine is about 35 feet from my bee hives ... okra needs heat , doesn't
do well until the real summer heat begins .

I grew them once but I only got one or two mature ocra thingies at a
time. Not enough to do much with.

get you much okra . What I do is harvest the pods as they mature and
slice them up . Slices go on a piece of wax paper on a cookie sheet and
into the freezer . Bag 'em up loose and use as much as you want at a
time . I use a thin batter because I use the okra frozen , it gives a
better coating than dry coatings/milk or whatever .

Yes, collecting them in the freezer is the way to go. Unless you have
so many plants that enough of them mature at the same time.

Â* Where is "here" ? I'm in North central Arkansas , and it's been in
the 80's here for a few weeks now . My okra was planted kinda late to
let the soil get nice and warm , there's like 20+ plants out there now ,
about 3" tall . I expect them to start producing around the first week
of July , and keep on until sometime in September or October . As long
as you keep it picked , it'll keep producing new pods . I usually get
tired of picking them around the middle of September and leave the last
few pods for seed .

"here" appears to be "Miss"issippi".

I grow okra here in northern NY, no problem other than occasionally
I'll miss harvesting some so they grow too large and then they are
tough/woody... once okra become over six inches they are only good as
dildos. Some of these okra grew too large... check out my UFO patty
