Fried Okry an' Yaller Squarshes
Â* While out and about on Friday we picked up a couple of yellow squash
, which my wife made plain better be on the table for dinner last night
so ... I grabbed a bag of frozen okra chunks (last year's) and made up
some light batter and fried both up in about an inch of veggie oil .
Went really well with the grilled chicken breast (also picked up on
Friday , 2 10 pound bags) and baked potatoes . It must be pretty good ,
she took the leftovers for lunch today - to eat cold . These were some
giant breasts , over a pound each side . I grill these whole then slice
when served . Makes for great sandwiches and makes a really nice chef's
salad . I used a simple batter for the squash slices and okra - 1 part
flour to 2 parts self rising white corn meal , an egg and enough milk to
get a thin batter . Salt and pepper to taste .
