Default Chopped pecans

We eat a lot of pecan halves in salads. I sometimes make a chicken salad
that uses them as well. But... I messed up and bought a HUGE bag of chopped
pecans and don't know what to do with them. I have already made Applets. As
in Applets and Cotlets. Those normally use walnuts but I used pecans. The
end result tasted good but I think there was not enough pectin in the apples
because they didn't set up as firmly as they should have. I normally use
apples from my tree and those are perfect.

I have also made vegan fudge using Christina Pirello's recipe but that calls
for brown rice syrup and I don't feel like trying to track that down.


And I made pralines which I know would be better with the halves. Damn but
they were good but that was also a way to use up some cream. I'm not
planning to buy more cream and as a diabetic, those are not what should be
eating.

Do you know of any savory type recipes that I could use these in? Do you
think they would work in a chicken salad or would they sort of get lost in
there? I also find myself with some extra canned pineapple. Apparently I
bought some at some point and it got put in a weird place. I found that
today. I have not made chicken salad with pineapple. I normally use apples.
I do have a lot of apples too. Hmmm...

Mainly the people I am cooking for are trying to avoid eating wheat. They do
eat some but I would prefer not to do something like a cake or cookies as I
won't eat that stuff and not sure that they would. I do sometimes make
gluten free things for them. I guess I could do some more zucchini muffins
if I ever find good zucchini again. For weeks now, the only zucchini I've
seen in the stores has been tiny and not very big around. That would use up
some nuts but I have a lot of them. Thanks!
