That old-school food might make an interesting anthropology class: Foods of the Boomer Generation. We go through the cooking of the recent decades. The 50's would have stuff like Jello-O salads, maybe maraschino cherry cake. The 60's could be stir fry and fondue. 70's would quiche and nachos. 80's: buffalo wings? A class like that would be very interesting to the kids of 2050 - when they're all eating printed nutra-cubes. One of the things I have a hard time imagining is a wild rice farm. |

I used the term "hot dish" and still didn't find the recipe. Yes, someone did post a link to one that fit the parameters of what I originally mentioned but I should have spelled out that none of the food was cooked prior to it going into the casserole dish. Save for the condensed soup that is because I assume that Campbell's or whoever cooked it. |

It's just that the particular recipe from that link is a whole lot more work than the one my mom used to make. Hers had you dump everything in the casserole dish as is and then bake. Most slow cooker recipes do have condensed soup in them. I do or did (might have gotten rid of it) a cookbook for the slow cooker with no canned soup. I think we just got burned out on slow cooker food. That was mostly what we ate for years due to Angela's dance schedule. I was okay with the food until Angela pointed out that it had a "Crock-Pot" taste to it. And she was right. Seemed that pretty much no matter what I cooked in there, the taste wasn't quite the same as what was done on the stove or in the oven. I am mainly just wondering about bake times. Although I did love this dish, I couldn't eat it now as almonds give me OAS. I was thinking that I might make it for the gardener though. Yeah, I could make it without the almonds but those were my favorite part. |

There needs to be plenty of liquid or youll end up with crunchy rice. I generally choose to pre-cook my rice, and make adjustments based on that. If you plan to use brown rice, Id definitely pre-cook it since it has such a long cook time. If using white, Id choose a plain American long grain (cheap basic). Honestly, Minute Rice or parboiled rice work best in casseroles such as this calling for raw rice. Fancier white rices such as jasmine or basmati usually impart too much flavor to be used for such concoctions. |

Dearie, let me explain. If you search almondine you will find recipes. If you search amandine you will also find some. Dare I say it, there are also recipes under Chicken Almond and Almond Chicken. Only a stubborn person would insist on your mother's recipe spelling when most likely some mid-western farm woman had a jumped up idea of how to make her ordinary casserole sound elegant in the church recipe book. I sincerely doubt that your recipe is French in origin -- not with canned soup. |

The word "Amandine" is French. It has a specific meaning. Almond Chicken is a Chinese recipe. This is all beside the point. Point being, *I* could not seem to find her specific recipe.
