tomorrow's a holiday potluck and I don't feel like making deviled eggs again
I want this to be vegan so any cheese etc. will be on the side the ingredients so far -- rotini, kalamata olives, pepperoncini, sun-dried tomatoes ... maybe red onion? and some oregano, I guess what kind of liquid should I add? any other suggestions? THX |

So, there will be one vegan I know of, and she is an extremely nice person who isn't attitudinal or judgemental about what she or others eat. The only reason I know she's vegan is because someone else told me. It's not that hard to make a pasta salad that's vegan. If you started digging in to most people's food beliefs and ethics wrt eating animals or animal products you'd find a lot of self-contradiction or just plain ignorance. Most people have never heard of Peter Singer, never stopped to think what "factory farming" means, or turn away when they are confronted with the reality and continue chomping away on that bacon double cheeseburger (I confess that last one is me). |

I don't like dressing on green salad but pasta salad not only needs it but it needs to soak into the pasta for better flavor. |

Tert, for pasta salad, I always use an oil dressing, like Italian dressing,
especially for a potluck, so it can sit out for a few hours without going bad. I add radishes, celery, bell peppers, mild onion, zucchini...you can really beef it up with veggies. Even mushrooms, although they tend to turn black after a few hours. They aren't bad, just unattractive. N. |

I use an Italian dressing on pasta salad too, but I use the same ingredients as for an Italian Hero Sandwich with pasta subbing for the bread... add diced pepperoni, sopressata, provolone, pepperocini,. grated parmasan, and cherry tomatoes. |

Shel, Terr was asking about vegan salad.
I put a couple kinds of cheese (small cubes), pepperoni and sometimes chopped hard-boiled egg, if I know it won't sit out over about 90 minutes. Also, peeled fresh tomatoes, chopped. I like the zesty Italian dressing (oil) I see on the shelf. N. |
