Default Veal Shoulder Blade Steaks?

I'm preparing my grocery list. Publix has veal shoulder blade steaks on
sale at $3.99/lb. I like veal, sue me. Veal is often prohibitively
expensive. This seems like a good price.

I've never bought this particular cut of veal before. I know it
contains bones; it's thinly cut from the shoulder roast. From what I
can quickly ascertain by reading about the cut online, they're good for
braising or pan frying. Any comments?

I'll check into that. The price sure beats the hell out of what they
charge for boneless veal chops or (forbid!) veal scallops cut for
scallopini or piccata.

No help from me, sorry - but I think you should buy now and figure it
out later. I've only cooked whatever the veal cut is with a round
bone in it (sirloin?).... and that was years ago, but it was tender,
whatever it was. Wish I could get my hands on veal shank (like a
giant drumstick)! I've eaten that in Midtown Manhattan (German
restaurant?) and it was "to die" for.

Excellent for veal stock. Or braise in tomato sauce, great for pasta.

I prefer beef shoulder chops for flavour although the veal chops are bound to be more tender. Give 'em a try...you can't really lose.

Not more flavorful, different flavor. There are many ways to prepare
veal shoulder chops, but I'd consider a rich veal stew... I'd trim off
as much meat as I can and set it aside in the fridge. Then I'd braise
the bones (brown in oven first if you like) with
herbs/spices/aromatics (a small parsnip adds good flavor) to create a
rich veal stock. Skim the fat and remove the bones, me I'd nibble
whatever meat clings to the bones before tossing them. Then cut your
veal meat into stewing chunks, lightly brown and proceed to build your
stew using the stock... go easy on the garlic and onions lest you
smother the lovely veal flavor... I think I'd do carrots, celery
hearts, green beans, 'shrooms, and dumplings rather than potatoes, or
serve over wide egg noodles... wait for the veal to become somewhat
tender before adding the veggies. It's time consuming so I'd make a
lot, it freezes well. Can do veal pot pies too. I don't think veal
goes well with tomato or red wine, a dry white is okay but I don't
think cooking with wine is any kind of enhancement... adding wine to
any dish is just an attempt to hide the TIAD elements... I might add
some cream ale. I think anyone, even whomever is rated as the
greatest chefs, cooks with wine cannot cook a lick, cooking with wine
is simply extreme pretentiousness. Cook with brewski or spirits,
never wine... lousy wine belongs down the drain, good wine is meant
for drinking, not cooking. Yoose want some alcohol in your veal dish,
a couple three glugs of Southern Comfort works very well.

Back in 1991, there were some stupid animal rights clowns protesting
animal research at the U of S. Florida. I went to the grocery store
and bought a steak, which I ate raw across the street from them while
I insulted them. It was fun.
