I've never bought this particular cut of veal before. I know it
contains bones; it's thinly cut from the shoulder roast. From what I
can quickly ascertain by reading about the cut online, they're good for
braising or pan frying. Any comments?

Depend it has bones but they can be removed to make it boneless.
