Default artichoke dip

Anybody have a recipe for dipping artichokes? I'm
talking about steamed or microwaved, then dipping the
leaves, usually served as appetizer.

The nost popular seems to be mayo, but that puts me off.
Or butter, not so bad, but I'd like some variety.

For artichoke you want a very mildly flavored dip, otherwise use corn
chips, or just stuff dip down your maw with a spoon. I dip artichoke
leaves into a mild olive oil with a smidge of fresh lemon juice with a
smidge of s n' p.

My favorite is mayo that has been thinned with lemon juice and I don't
vary it... but I don't serve artichokes as an appetizer. If I did,
maybe I'd go with a flavored extra virgin olive oil. This looks good

Steamed Artichokes with Garlic, Olive Oil Dipping Sauce
Source: Patti, West Bloomfield, MI

4 servings

Ingredients

1/3 cup extra virgin olive oil
3 garlic cloves grated finely
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dried oregano, rubbed well

Directions

Put olive oil in a pan with all of the ingredients on low heat. Stir.
When the salt melts, take pot off of the heat. Dip the Artichoke
leaves in this oil and enjoy!

Butter wins in this house, hands down.

I have also had artichokes with a mild aioli or ranch-type dressing; not
bad.

Butter is better.

Default artichoke dip

Italian salad dressing-I love my 3 Cheese Italian Salad dressing and I
love chunks of artichokes in salads with that dressing.

I know! The Taco Bell baja sauce-that guy with the cookbooks who
duplicates restaurants recipes has a recipe for the Taco Bell baja
sauce-I made it once and it does taste identical. They would be awesome
dipped in that.

The butter dippers and mayo dippers were half and half in my household of
origin. My dad and I ate butter, my mom and brother ate mayo.

N.B. it was not treated as an appetizer in my house, but as a vegetable
accompaniment to dinner.

A good homemade style mayo or aioli is nice, though.

My ex, who is French, rocked my world (and I am an artichoke lover) by
making a vinaigrette for dipping.

Hollandaise sauce would be nice.
