Default artichoke sub

I really like the artichoke sub at Penn Station, and am wondering if I
can recreate it. I got some canned quartered artichokes. And mayo.
And a loaf French bread. My gf says they use cheese too. I wonder if
Swiss would best to use? Or mozzarella. I don't have any provolone.

Could look at their sandwich description online to figure it out?
