I've made some cherry/almond/marshmallow/dark chocolate candies and
may substitute English walnuts for the almonds, but I just bought some dried sweetened pineapple and macadamia nuts and want to make a pineapple/macadamia/marshmallow... And the question is: Milk or dark chocolate? I love dark, but I already have one candy mix made with the dark chocolate, and I think milk may actually be good with the pineapple/macadamias. If I had both kinds of chocolate I would have made half of each kind in dark and half in milk. I love both kinds. |

Good milk chocolate can have delicious caramel notes as well as a significantly higher percentage of cacao. It gives a truffle creaminess like nothing else. Unfortunately, many people think of Hershey bars when they think milk. It is currently fashionable to affect a dislike of milk chocolate. Most people who do so have never actually had a really good milk chocolate. |

I like it too, but dark chocolate seems more idiot proof, and I never eat chocolate without milk on the side. The sweeter, lower cocoa ones are nice with whole milk that has been left to rise to close to room temperature. After low carbing, I think that if/WHEN I decide to restrict carbs again, the two things I'd choose for carbs would be milk and carrots cooked to buttery tenderness, and also the sugar in chocolate. Then there's the residual sugars in high quality beer. --Bryan |

But they can't. Most people don't care that much, or at all. But many can tell. I saw that happen once while a housemate of mine had a couple of friends over and there were making chocolate chip cookies. Which mostly they were sitting around talking and eating the cookie dough ingredients. They had purchased both Nestle's Semi-sweet chips in the yellow bag and also some generic grocery store brand chips. Not that either were what we chocolate connoisseurs would call good chocolate, but in sampling both we all agreed that the Nestle's were better than the grocery store brand. But we ate both, leading to append chocolate to the old joke about why pizza is like sex, which is because when it's good, it's REALLY good, and when it's bad, it's still pretty good! Personally I prefer the taste of dark and the darker the better. But it messes with my GERD. Milk doesn't make me sick. But I don't like it as well. I learned years ago if I am making something for someone and I am unsure of what they like, I do a mix of both. |

Heat the chocolates separately, but before portioning out into individual servings to cure, combine the two chocolates, but don't mix them. Move them around just enough so when you put them on the wax paper, they are kind of swirly. Maybe you'd need two people and a big counter to do it. Perhaps it'd be better to do it from two pots. Put the milk chocolate out mixed with nuts, then go back with a small ladle and drizzle the dark chocolate over the mounds and lumps formed by the nuts in the milk chocolate part. Damaeus |
