Default tomatoes and cucumbers and red onions

I went by my favorite raodside stand this morning and they had a huge selection
of very yummy looking fresh tomatoes, cucumbers and red onions, so, I bought
several of each. I am having my usual gathering of friends over tonight for
Sunday dinner, and wondered if anyone had any creative ideas using these? Maybe
a big salad or relish or something? I have pretty much every spice and herb
known to man (fresh basil, oregano, parsley and thyme on the windowsill). I'd
love to hear your ideas.

Slice all thinly into a bowl and toss with your favorite olive oil, s n' p, and
drizzle with decent balsamico.... serve mounded on a platter of lettuce and
topped with fresh mozz and olives.... put out a couple sticks sopressata, a
freshly baked bread, a jug of dago red and you don't need to cook.

You've got a great start on gazpacho. Perhaps 2 peeled cucumbers, 1 pound of
tomatoes (peeled if you want to bother), and half a purple onion), half a cup
of vinegar, 4 ice cubs, a slice of dried bread, a drizzle of olive oil, and a
little salt and pepper, put it in the blender, and that's about all you need.
Of course, there's more you CAN do. . . . oregano, basil, bell pepper, thyme,
celery, garlic . . . Some folks like to put croutons on top. Serve chilled.

Mmmmmm, I'd add some lemon juice, olive oil, pepper, olives and feta
cheese, and fresh minced oregano. Tasty!

If it's really top quality produce, which it sounds is the case, just cut
'em up in a bowl with some fresh basil, salt, pepper, and maybe a tad of
balsamic vinegar. If the onion is strong slice it and soak in tepid water
for a while. IMO you do not need to "gussy up" really good salad ingredients
with cheese, etc.

You can have your tomatoes/salad any way you like.
This was a salad a former roommate used to make fairly
frequently in the summer. I liked it. YMMV.

I also like fresh tomatoes, basil, and olive oil, 'gussied up'
with fresh mozzarella. I doubt I'm alone on that point, but
if I am ...sue me ;-)

But your 'simpler' salad sounds lovely too.

Oh, I agree. My point is that excellent salad ingredients taste great on
thier own while ordinary salad ingredients do not, so you need to add
cheese, olives, etc. to get a good salad.
