I haven't an idea for the cukes, as I do not like them, but here's the
fresh and crispy salsa I always get raves about.

Picky's Crunchy Salsa
5 large dark red tomatoes, chopped well
4 long celery stalks (not the whole bunch), sliced thin
1/2 large green bell pepper, minced
1 large can of "Progresso" tomatoes, chopped well
2 Tbsp. vegetable oil
1 Tpsb. vinegar
2 entire bunches of scallions, tops included, thin-sliced
1 tsp. "Chili Tepin" dried, crushed chili
However many super thinly chopped/ground jalape=F1os wanted
Put all into the biggest bowl you have, best with a 12" diameter. Cover
top of mixtrure once with a light grind of black pepper, once with salt,
twice with garlic salt, and add one level Tbsp. white sugar. Let "set"
countertop for a few hours, stirring each ten minutes or so, then
refrigeraste in a GLASS container. Keeps about a week before losing too
much of the crispness. The two "brand names" used are not terribly
important, though quite easy to find here on the U.S. left.
