I went by my favorite raodside stand this morning and they had a huge selection
of very yummy looking fresh tomatoes, cucumbers and red onions, so, I bought several of each. I am having my usual gathering of friends over tonight for Sunday dinner, and wondered if anyone had any creative ideas using these? Maybe a big salad or relish or something? I have pretty much every spice and herb known to man (fresh basil, oregano, parsley and thyme on the windowsill). I'd love to hear your ideas. Sandra |

Perhaps 2 peeled cucumbers, 1 pound of tomatoes (peeled if you want to bother), and half a purple onion), half a cup of vinegar, 4 ice cubs, a slice of dried bread, a drizzle of olive oil, and a little salt and pepper, put it in the blender, and that's about all you need. Of course, there's more you CAN do. . . . oregano, basil, bell pepper, thyme, celery, garlic . . . Some folks like to put croutons on top. Serve chilled. Neil |

If the onion is strong slice it and soak in tepid water for a while. My point is that excellent salad ingredients taste great on thier own while ordinary salad ingredients do not, so you need to add cheese, olives, etc. to get a good salad. -- Peter Aitken Remove the crap from my email address before using. |
