Default leftover Limburger cheese?

I like a Lim sandwich every once in a while with tomato and sweet
onion - but, what can I do with the amount left over? I wish they'd
package it in much smaller portions. Does is freeze successfully,
and should I shred it first? Any other ideas rather than toss or
shove to back of fridge to be forgotten til next clean sweep?

Most cheese freezes well -- I'd wrap one-meal-sized chunks of it
(wrap it well!) and freeze it.

Limburger comes in such a small package. Have 2 sandwiches. It will keep,
however, keep it in a glass jar. Plastic containers or plastic wrap will
not keep the smell from saturating your fridge forever. I've never tried
freezing it, but I don't see why not. Try it. Sorry--you're going to have
to freeze it in glass. Honest.

Doubtful. The aroma molecules would be likely
to diffuse through a thin plastic film.
On the other hand, a foil packet double-folded
on all seams would probably be aroma-proof.

You could try to find a cheese shop / deli counter that will
sell you smaller amounts of it.
